Skyline Chili

Skyline Chili
I read an article calling this recipe Cincinnati Chili. Our two younger children graduated from Miami University of Ohio in Oxford, Ohio which is just a few miles from Cincinnati, Ohio. Ask anyone who has lived in that area what the favorite dish of the locale is and they will respond either Montgomery Ribs or Skyline Chili. You can find restaurants that specialize in serving just Skyline Chili. Grocery stores sell packets of the spices and dehydrated tomato mix to add to the beef.

Ingredients:
1 Tablespoon vegetable oil
2 onions, chopped
1 clove garlic, minced
2 Tablespoons tomato paste
2 Tablespoons chili powder
1 Tablespoon dried oregano
1 1/2 teaspoon ground cinnamon
salt
3/4 teaspoon ground black pepper
1/4 teaspoon allspice
2 cups low sodium chicken broth
2 cups tomato sauce (not pasta sauce)
2 Tablespoons cider vinegar
2 teaspoons brown sugar
1 1/2 pounds lean ground beef
spaghetti pasta
grated cheddar cheese

Directions:
Heat oil in Dutch oven over medium-high heat until shimmering. Cook onions until soft and browned around edges, about 8 minutes. Add garlic, tomato paste, chili powder, oregano, cinnamon, 1 teaspoon salt, fresh ground black pepper, and allspice. Stir until fragrant about 1 minute. Add the chicken broth, tomato sauce, cider vinegar, and sugar. Cook together for about 15 to 20 minutes. Add the very lean ground beef and stir to break up the meat. Bring to a boil and turn heat to medium low, simmer for 15 to 20 minutes until chili is dark brown and slightly thickened. season with salt and serve. Can be refrigerated 2 to 3 days in a tightly covered container or frozen for up to 2 months.

Five ways to serve:
1.) Chili can be served alone but almost never is.
2.) Served over a bed of cooked spaghetti.
3.) Served over spaghetti topped with shredded cheddar cheese.
4.) Served over spaghetti topped with onions and cheese.
5.) Served over spaghetti topped with onions, cheese and oyster crackers.
Note: I had Skyline Chili in Cincinnati served with kidney beans in the sauce. The recipe is very versatile.
