        Apple Pie With Almond Paste 

4-5 Granny Smith, or other baking apples, peeled, cored, and sliced
1/4 c. Sugar
1 teaspoon cinnamon, divided
1  9” pie shell

7oz. Sweetened Almond Paste
1/2 c. Flour
1/2 c. Uncooked oats
1/2 c. Brown sugar
1/4 c. Almonds, chopped
6 tablespoon Cold butter, in 1/2 “ pieces

Preheat oven to 375°F, with rack in middle.
Put apples in large bowl.  Mix together sugar & 1/2 teaspoon.  cinnamon & toss with apples.

On a sheet of wax paper, press the almond paste into a small disk.  Lay a piece of wax paper on top of the almond paste.  Rolling from the center outward, roll it into a 9” diameter. (This is possibly enough for 2 pies, if rolled thinner.)  Lightly press the almond paste into the pie shell.  Add the apple mixture.  It will mound up considerably.

TOPPING:  Mix together the remaining cinnamon, flour, oats, brown sugar, and almonds.  Using a pastry cutter or your fingers, cut the butter into the mixture until crumbles form.  Pat the topping onto the pie.

Bake 50-60 min., until crust is golden.
