Two Pumpkin Favorites, Pie and Cake

PUMPKIN SHEETCAKE
Ingredients:
2 cups sugar
4 eggs
1 cup vegetable oil
2 cups flour
1 cup chopped nuts
2 cups fresh pumpkin or one can
1/2 teaspoon salt
1 teaspoon baking soda
2 teaspoon baking powder
2 teaspoon cinnamon or pumpkin pie spice

Directions:
Preheat oven to 350 degrees. In a large bowl, mix all ingredients together and pour into a sheet cake pan. Bake at 350 degrees for 20 to 25 minutes. Let cake cool and then add frosting.

Frosting Recipe:
One 8-ounce package cream cheese
2 sticks of softened butter
1/2 cup chopped nuts
box of powder sugar

Mix well and spread on cake after it is cool.

PUMPKIN PIE
Ingredients:
1 cup sugar
1 tablespoons flour
1 teaspoon cinnamon
1/2 teaspoon pumpkin pie spice
1 teaspoon salt
2 eggs, separated
1 cup pumpkin
1 cup milk

Directions:
Combine dry ingredients. Add egg yolks, milk and pumpkin. Fold in beaten egg whites. Bake at 400 degrees for 35-45 minutes or until toothpick comes out clean. Makes one 9-inch pie.
