Herbed Prawns

Herbed Prawns
1 pound large prawns, peeled and deveined
1/4 cup fresh lemon juice (one large lemon)
1/4 cup extra virgin olive oil
1 tablespoon minced garlic
1 tablespoon chopped fresh rosemary
1 tablespoon chopped fresh thyme
Coarse salt and ground pepper
In a medium bowl, combine the lemon juice, olive oil, garlic and chopped herbs.  Add salt and pepper to taste, then add the prawns.  Toss well and cover with plastic wrap.  Refrigerate for  at least one hour.  Serve with Mango Salsa, posted yesterday.
