Grilled Honey Ginger Pork Tenderloin With Fresh Plum Hoisin BBQ Sauce

GRILLED HONEY GINGER PORK
TENDERLOIN WITH FRESH
PLUM HOISIN BBQ SAUCE
This is another tasty recipe from my favorite instructor at Great News Cooking School.
Ingredients:
2 pork tenderloins
1/4 cup hoisin sauce
2 T. soy sauce
2 T. honey
1 T. minced fresh ginger
Serves 4 to 5.

 Plum Hoison BBQ Sauce
1 tsp. rice vinegar
1/2 tsp. Asian chili sauce (Sriracha)
2 garlic cloves, minced
2 T. grapeseed or vegetable oil
1 to 2 large plums, quartered, pitted, cut into 1/4-inch pieces (1 cup) 2 green onions, sliced

Directions:
1. Trim pork tenderloins of all fat and silverskin. Butterfly pork by slicing down the center part way through.

2. Stir together hoisin, soy, honey, ginger, vinegar, garlic, and cayenne in a small saucepan. Remove 3 T. of the sauce to a small bowl and stir in the oil. Coat pork with this mixture and let stand at room temperature 30 minutes.

3. Preheat grill. Grill pork, cut side down for 6 minutes. Turn over and grill another 6 to 7 minutes or until the internal temperature of the pork reaches 150 degrees. Remove pork and let stand for 8 minutes before slicing on a diagonal into 1/2 inch thick slices.

4. While pork is cooking, bring remaining sauce to a simmer and cook until slightly thickened, about 2 minutes. Add plums and simmer, stirring, 3 more minutes. Serve pork slices topped with Plum Sauce and sprinkled with green onions.
