Fried Egg and Fig Jam Sandwich
Ingredients:
2 tablespoons olive oil
1 medium red onion, sliced thin
kosher salt and freshly ground black pepper
2 large eggs
2 tablespoons fig or blackberry jam
spring greens, Arugula or Romaine
4 pieces artisan bread, sliced thin
Directions:
Heat the oil in a large nonstick skillet. Add the onion, salt and pepper. Cook over low heat, stirring occasionally until golden, 15 -18 minutes. (Don’t shorten the time on the onions.) Transfer onions to a plate.
Add eggs to the same skillet. Season with salt and pepper and cover. Cook 4 minutes for slightly runny yolks. Remove lid, flip and cook on the other side for a harder yolk, if preferred.
- While eggs are cooking, toast bread. Spread all pieces with a thin layer of fig jam. Top with egg, onion, lettuce. Makes two sandwiches.
