Bacon Potato Bites



Ingredients:
4 Medium Russet Potatoes
20 slices of Bacon
1-2 Tbsps. Butter
½ Tsp. Onion Powder
¼ Tsp. Garlic Powder
½ Tsp. Dried Oregano
½ Tsp. Dried Marjoram
¼ Tsp. Ground Sage
¼ Tsp. Chili Powder
¼ Tsp. Spanish Paprika
¼ Tsp. Ground Black Pepper
⅛ Tsp. Mustard Seed
*Salt (optional/by preference)
*Bowl of ice cold water with a dash of salt for soaking potatoes
*Olive oil for greasing baking sheet

Directions:
Properly clean potatoes and slice into rounds, thickness according to your preference. Ideally, ¼ inch or ⅓ inch thickness. As you slice, immediately drop each piece onto the bowl of water to prevent from browning. Discard the small pieces from the ends of potatoes.

After slicing all potatoes, drain and pat dry. Brush each side of potato with softened butter

Combine onion powder, garlic powder, oregano, marjoram, sage, chili powder, Spanish paprika, black pepper and mustard seed.


Season potatoes.

Separate or slice bacon into ½ inch thick.
Grease baking sheet with olive oil or softened butter. 

Initial bacon slice to wrap potato from both sides.Next slice, start with forming a cross and wrap potato until covered. 

Sprinkle remaining herbs mixture on top of bacon-wrapped potatoes. Make sure the bacon-wrapped potatoes are in a single layer on the baking sheet.

Bake at 350° for 20 minutes or until potatoes are tender and bacon are crisp.

Allow bacon-wrapped potatoes to cool for about 2 to 3 minutes and transfer to a serving plate. Enjoy, finger-food style!
