Amish Dishpan Cookies
Ingredients:
1 pound butter
2 cups brown sugar
2 cups white sugar
4 eggs
3 1/2 cups flour
2 teaspoons baking powder
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon vanilla
5 cups quick oats
1 cup raisins or currents
1 cup nuts
1 cup coconut
1 cup chocolate chips
Directions:
Cream sugar and butter. Add eggs, one at a time, then add vanilla. Add dry ingredients, then oats. Any of the following may be added as you choose, raisins, nuts, coconut, or chocolate chips.
Drop by tablespoon full on prepared cookie sheet. Dip tines of fork in sugar and flatten dough. Bake at 375 for 8 to 10 minutes.
Yield 14 DOZEN cookies.
Note: I found that the dough can be mixed one day and baked the next. Keep in a covered container in refrigerator. This cookie also freezes well.

ohhh, I tried the cookies, but they aren't quite right...they can't compete with yours. :-(

Did Leo ask if you planned to open a bake shop when he saw the yield? I always had to freeze some as the recipe makes so many!
hee hee, yes, he did. And I even made only half the recipe. I will have to freeze some though...:-)
