Bruleed Cheese
Slice rind off top of a Brie or Camembert wheel. Evenly sprinkle cut side of cheese with 1 to 2 tbsp white sugar. Caramelize with a culinary torch or under the broiler, for 2 to 3 minutes or until browned and bubbly. Allow brûlée to harden slightly and serve with a cheese knife, for cracking with crackers and fruit.
