Blue Cheese Dressing

Iceberg Lettuce With Blue Cheese Dressing
Ingredients:
1/2 cup creme fraiche
2 Tablespoons red wine vinegar
1 Tablespoon Meyer lemon juice
1/2 teaspoon Worcestershire sauce
Pinch of cayenne pepper
1/2 cup crumbled blue cheese
Salt and freshly ground pepper
1 small head of iceberg lettuce, cored
1 Tablespoon minced fresh flat-leaf parsley
4 ounces bacon, diced and fried crisp

Directions:
Whisk the creme fraiche, vinegar, lemon juice, Worcestershire sauce, and cayenne pepper together in a large bowl. Whisk in the blue cheese and season with salt and pepper to taste. Cover and refrigerate.

Cut the head of lettuce into quarters and place the wedges side down on four plates. Spoon the blue cheese dressing across each wedge and garnish with the crisp bacon and parsley.
