Irish Soda Bread With Golden Raisins      
Makes 2 loaves.
Ingredients:
3 1/2 cups flour
1 tsp. baking powder
1 tsp. salt
2 T. caraway seeds
1/4 cup unsalted butter, cut in cubes
 2 cups golden raisins
1 1/2 cups buttermilk
1 large egg
1 1/2 tsp. baking soda
3 T. melted butter

Directions:
Preheat oven to 375 degrees. In a food processor combine flour, baking powder, salt and caraway seeds; pulse until combined. Add butter and pulse until dispersed evenly throughout flour mixture. Transfer mixture to a large bowl and stir in the golden raisins.
 
In 2 cup liquid measuring cup, combine the buttermilk, egg and baking soda; whisk until combined. Add liquid mixture to flour/raisin mixture. Dough will be very sticky.
 
Flour a board liberally. Divide dough in half and form into two rounded mound-type loaves, adding just enough flour to prevent sticking. Place bread mounds on parchment-lined baking sheet. Bake for 30 to 40 minutes or until lightly golden. Remove bread to a cooling rack and brush with melted butter. Serve warm or at room temperature.

Kenucky Biscuits

Kentucky Biscuits
Ingredients:
2 cups flour
1 1/2 tsp baking powder
1/2 tsp baking soda
2 tablespoons sugar
dash salt
1/2 cup butter
3/4 cup buttermilk Don’t have buttermilk? No prob, just add 1 or 2 Tbls of vinegar to milk.

Directions:
Mix dry ingredients.
Cut in butter, add milk and knead into soft dough. Do not over knead!
Pat into a ungreased 6×6 pan. I use a pie pan myself so you can use whatever.
Cut into serving size portions before you cook.
Bake at 400′ for 15 to 20 minutes or until done and golden brown.

French Bread




Easy French Bread

Ingredients

1½ cups warm water
1 tablespoon honey
1½ teaspoons salt
1½ tablespoons Active Dry Yeast
3½ - 4½ cups flour

Directions:

Proof yeast by combining water, honey, and yeast. Let set for 5-10 minutes until there is a foam on top.

Knead in salt  and flour until dough is no longer sticky. Dough should not stick to your fingers.

Form into a loaf shape on baking sheet. Cover with a towel and let it sit for 15 while preheating the oven at 425.

Cut slits in the top and bake for 15-20 mins.
