Healthy Cauliflower Fried "Rice"

Healthy Cauliflower Fried "Rice"
Ingredients:
1 head cauliflower
1 tablespoon sesame oil
1 tablespoon garlic, crushed and chopped fine
1 cup carrots, small dice
8 ounces beef, cut in bite sized pieces
1 cup peas
2 eggs, beaten
White pepper
3 tablespoons soy sauce
Spring onions for garnish

Directions:
Place the cauliflower in a food processor.  Process until fine pieces.  Set aside.

In a skillet, heat the sesame oil and place the garlic and diced carrots, sauté until softened; add beef and stir until browned.  Add cauliflower and peas and stir to mix well, allow the mixture to sauté about 2 minutes.  Make a well in the center of the mixture and pour egg mixture, stirring until eggs are scrambled, stir the entire mixture to mix well.  Add sesame sauce, stir again and serve.  Garnish with sliced Spring onion.

Note:  Shrimp or sliced pork may replace beef.  
Cooked quinoa and chicken can be used with this recipe.
