Sweet And Spicy Cocktail Nuts

Sweet And Spicy Cocktail Nuts
Ingredients:
1/2 cup sugar
1 1/2 teaspoon salt
1 1/2 teaspoon chili powder
1/2 teaspoon cinnamon
Pinch cayenne pepper
1 large egg white
2 cups nuts, whole or halves, almonds, pecans or
   cashews.

Directions:
Place a rack in the center of oven and preheat to 300 degrees.  Spary a nonstick baking sheet with a silicon baking mat or parchment paper.  Mix sugar, salt, and spices, together in a small bowl.  Beat the eggwhite lightly with a fork in a larger bowl just breaking up the eggwhite until it is runny.  Toss the nuts and stir to coat them with the egg white, then the sugar and spice mixture, continuing to stir until the nuts are evenly coated.  Using your fingers, lift the nuts one by one from the bowl, letting the excess drip back into the bowl.  You can run the nuts against the side of the bowl to rid the last bit of egg whites.  Transfer then to the baking sheet seperating them the best you can.   Bake for 30 or 35 minutes or until the nuts are browned and the coating is dry.  Cool for 5 minutes, then transfer the nuts to another baking sheet, a cutting board, or a piece of parcjhment paper, breraking them apart as necessary and letting them cool completely.
