Lentil Soup ~ Dampf Nudel

Lentil Soup 
Damph Neudle ~ Wet Noodle

Soup
Ingredients:
1/4 lb. bacon, hambone. or ham hock
1 lb. lentils
Water
5 beef boullion cubes
4 carrots
4 stalks celery with tops
1 large or two medium parsnips

Directions:
Brown bacon, add lentils, water, boullion cubes.  Cook 1 hr.

Add vegetables and cook till done.

In a small fry pan, saute 1 medium onion in butter;  add 1 1/2 tablespoon flour to make roux.  Add some broth from lentils.  Return all to the soup.

Dampf Nudel  Wet Noodle
Ingredients:
4 cups flour
1/2 cup sugar
1 teaspoon salt
3 tablespoons butter
2 eggs
2 pkgs. dry yeast
3/4 cup lukewarm milk

Directions:
Mix milk and yeast with a pinch of the sugar.  When proofed, make well in flour add yeast and milk mixture and mix well.  Let rise, then add the rest of the ingredients.  Mix well and let rise again.  Punch down, knead well.  Shape in bun shapes, place on floured surface to rise till double.

Heat electric skillet to 350*FLightly coat skillet with shortening or oil.  Add approximately 1 teaspoon salt 
to enough water to fill the skillet to 1/2 inch deep.  Put raised "rolls" in water about 1" apart.  Cook until the water evaporates WITHOUT LIFTING THE LID.  When the skillet has a crackling sound, lift the lid carefully without tipping it.
