Cottage Cheese Pie Topped With Peaches

Cottage Cheese Pie
Ingredients:
Crust:
2 cups all-purpose flour
1/4 teapoon baking powder
1/2 teaspoons salt
1/2 cup vegetable oil
3 tablespoons cold water

Prepare a 9" pie dish, and set aside.
In a mixing bowl, whisk dry ingredients: add wet ingredients and mix well until a ball forms.  Place in center of pie and press until even on center and sides.

Filling:
2 16oz. containers of cottage cheese
2 tablespoons flour
1/8 teaspoon salt
3/4 cup sugar
2 eggs, beaten with fork
zest of 1 lemon
2 tablespoons fresh lemon juice
1/4 cup milk
1 teaspoon vanilla

Mix ingredients well and pour into pie dish.  Sprinkle with nutmeg and cinnamon.

Topping:
2 peaches
2 tablespoons sugar

Peel 2 peaches, sprinkle with sugar and set aside for 20 to 30 minutes.  When pie is cool or just before serving, top with fresh peaches.
