Ingredients
1/3 to 1/2 cup brine from olives
1 cup warm water (enough to make 1 1/2 cups when combined with brine)
2 tablespoons olive oil
3 cups bread flour
1 2/3 cups whole-wheat flour
1 1/2 teaspoons salt
2 tablespoons sugar
1 1/2 teaspoons basil (dried leaf)
2 teaspoons active dry yeast
1/2 to 2/3 cup olives (finely chopped Kalamata, about 2 dozen pitted olives)
Directions:
Put the olive brine in a 2-cup measure; add warm water to make 1 1/2 cups volume.
Put all ingredients except for the olives in the bread machine according to your manufacturer's preferred order.
Choose the basic or wheat setting on your bread machine.
Add olives at the beep indicating time to add mix-in ingredients.
When your loaf is finished baking, slice it and enjoy it by itself, with butter, or with olive oil.
Recipe Tip
Bread machines have a preferred order of ingredients, and bread machine recipes are written so you add the ingredients in the listed order. The default order is to add the liquid ingredients first, then the dry ingredients, and finally the yeast. For bread that has mix-in ingredients such as the chopped kalamata olives, your bread machine will signal you for the right time to add them.
