Rice Pudding
This recipe makes a pudding with a creamy top layer.Ingredients:
2 1/2 cups milk scalded
3 eggs beaten
1/2 cup sugar
2 teaspoon vanilla
1 cup cooked rice
1/4 cup raisins
Dash nutmeg
Directions:
Temper beaten eggs with scalded milk. Combine sugar and vanilla with milk and stir until sugar is dissolved.. Place in prepared baking dish.
Add cooked rice and raisins and stir. Sprinkle with nutmeg. Cover casserole and place in baking pan with 1/2 inch hot water in bottom of baking pan.
Bake at 350*F for 1 hour until knife in center comes out clean.
