Moroccan Carrot Salad

Moroccan Carrot Salad
It is the spices that make this Moroccan Carrot Salad so good!

Ingredients:
Mix in a bowl:
2 cups shredded raw carrots
4 Medjool dates, pitted and diced
1/8 cup red onion or scallions, diced
Dressing:
1 tablespoon olive oil
1 lime, zested and juiced
1/4 teaspoon ground cumin
1/8 teaspoon ground nutmeg
1/8 teaspoon ground turmeric

Directions:
Want it sweeter? Add a chopped apple and 1/4 cup fresh chopped spearmint.
Want it savory? Add 1/2 cup cooked lentils, 1/4 cup fresh chopped cilantro, a dash of Aleppo Pepper, and salt and pepper to taste.
***Oh, also: you can top this salad (sweet or savory version) with crumbled feta cheese and chopped pistachio nuts! — with Laurel Stone.
