Air Fryer Mozzarella

Air Fryer Mozzarella Medalions
Ingredients:
16 ounces fresh mozzarella log
ounces plain Panko bread crumbs Note 1
Tablespoons Italian seasoning
Tablespoons garlic powder
eggs, whisked
non-stick cooking spray
Marinara Sauce, optional for dipping store bought can be used

Directions:
Slice your log into 16 slices. Transfer each slice onto paper towel, and dab each slice to remove any moisture.
In a medium sized bowl, mix together the Panko breadcrumbs, Italian seasoning, and garlic powder.
Place your Medallions into the egg wash and make sure it is fully coated on each side.
Place the Medallion into the Panko breadcrumbs and coat both sides. Repeat these two steps one more time so the mozzarella slices have a double coating of breadcrumbs
Place the breaded mozzarella slices in the freezer for about 30 minutes. This will firm them up so they do not melt too quickly. 
Preheat your air fryer at 400° for five minutes. You do this by starting the air fryer without any food in it.
Give a light spray to the Panko encrusted mozzarella pieces. Transfer your medallions to your air fryer. Make sure that they are not touching one another.
Set your air fryer to 390° For five minutes. Flip them over and spray them again with a non-stick spray. Set your air fryer to 390° for an additional 2 to 3 minutes. They should be crispy and brown.
Eat as is, or a dip in your favorite marinara sauce! Enjoy
Notes
Note 1: You can also used seasoned Panko or Italian seasoned breadcrumbs

Total cook time is going to vary depending on the size of your air fryer. My air fryer has multiple layers so I can fit all 16 into it. Some are smaller and you will need to do multiple batches.

  2. Spray a baking sheet with olive oil spray.
  3. Cut your mozzarella into about 1-inch pieces.
  4. In a small mixing bowl, beat the eggs and water.
  5. In another small bowl, mix the Italian breadcrumbs, garlic salt, and Italian seasoning.
  6. Dip your mozzarella slices into the egg mixture and then into the bread crumb mixture.
  7. As you coat the mozzarella slices, place them on the baking sheet.
  8. Place the baking sheet into the freezer for about 30 minutes.
  9. Then coat again with the egg mixture, and then with the bread crumb mixture.
  10. Freeze them for another 30 minutes.
  11. Spray your air fryer basket with olive oil spray.
  12. Set them into the air fryer for 6-8 minutes at 390 degrees, air fryer setting. Spray the breading with olive oil, which will help them crips up.
  13. Plate, serve, and enjoy!
  14. Some Tips For Air Frying Fried Mozzarella.
    1. They must be completely frozen before air frying. Otherwise, the coating will fall off.
    2. Use olive oil spray; I always spray my basket so that the food does not stick. 
    3. Spray your food with olive oil; this is my number tip for everyone, if you have any breading, you MUST spray; otherwise, your breading will never get golden brown. 
    4. Do not overcrowd the basket; the air fryer works by circulating hot air around the basket. If you restrict the airflow, the food will not cook correctly.
