Serves 8.
1 lb. salad macaroni or Ditalini pasta or
1 1/2 lbs. cauliflower, cut into small florets
1 1/2 cups mayonnaise
2 T. sweet pickle relish
6 hard-boiled eggs, sliced
2 to 3 ribs celery, finely chopped 1/2 cup sliced black olives
1/4 cup diced pimientos or roasted red bell peppers 3 T. chopped fresh dill
1 tsp. paprika
Salt and pepper to taste
Sliced green onions, for garnish
Cook pasta in a large pot of boiling salted water until tender. Rinse with cold water to stop cooking. Drain well and place in a large serving bowl. If using cauliflower, cook the cauliflower with 2 T. water, covered, in the microwave on HIGH power for 8 to 10 minutes or until tender. Drain well and cool completely.
In a large mixing bowl combine all the ingredients except eggs and mix with pasta or cauliflower until blended. Gently fold in eggs. Garnish with green onions
Chill until ready to serve and up to 24 hours.
