Aunt Odelia's Angel Food Cake
Seven Minute Icing
Ingredients:
1 cup Swans Down cake flour
1 1/2 cup confectioners sugar
1 1/2 cups egg whites
1 1/2 teaspoons cream of tartar
1/4 teaspoon salt
1 cup granulated sugar
1 1/2 teaspoon vanilla
1/2 teaspoon almond extract
Directions:
Sift flour with confectioners sugar three times, set aside.
Beat egg whites and add cream of tartar and salt. Gradually add sugar and continue beating until it forms peaks.
Add vanilla and almond extracts.
Using a whisk or spoon with holes, gradually and carefully fold flour mixture into egg white mixture.
Pour mixture into a prepared angel food cake pan.
Bake at 350* on lower oven rack, 40 minutes or until top cracks.
Cool upside down on bottle neck for 1 hour.
Seven Minute Icing
1 cup sugar
1/2 cup water
1/3 teaspoon cream of tartar
Cook to soft ball stage or spins a thread.
Beat 2 egg whites until they form a peak. Slowly pour boiling mixture into egg whites while mixing until it forms peaks.
Fold in 1 1/2 teaspoon vanilla.
Or serve topped with fruit.
