BBQ Chicken Pizza Soup

2 T. olive oil
1 cup chopped red onion
1 T. minced garlic
2 cups low sodium chicken broth 

1/2 cup BBQ sauce
2 cups shredded cooked chicken 

1/4 tsp. garlic salt
Pinch cayenne
8 T. chopped cilantro, divided use
1 cup grated smoked Gouda cheese
Serves 4.

1. Heat oil in a medium pot over medium heat. Add the onion and garlic and cook stirring, for 7 minutes or until onion is tender. Pour in chicken broth, BBQ sauce, garlic salt and cayenne; bring to a boil, stirring occasionally. Reduce heat to low and simmer for 10 minutes.

2. Stir the chicken into the soup and continue simmering until warmed through, 4 to 5 minutes. Stir in 6 tablespoons of the cilantro into the serve and then ladle soup into bowls. Serve topped with the grated cheese and the remaining cilantro.
