Pork Ragu On Creamy Parmesan Polenta

INSTA-POT PORK RAGU ON CREAMY PARMESAN POLENTA
Ingredients:
2 1/2 lbs. boneless pork shoulder or boneless country-style spareribs, excess fat removed, cut into 4-inch pieces
Kosher salt and freshly ground black pepper
1 to 2 T. vegetable oil
1 small onion diced
4 garlic cloves chopped
Serves 6.
2 T. tomato paste
1 cup full-bodied red wine
1-14.5 oz. canned diced tomatoes
1/2 tsp. smoked paprika
Bouquet garni made of: 5 sprigs fresh thyme, 2 sprigs rosemary, 2 bay leaves

Directions:
1. For the Ragu, pat the pork shoulder pieces dry and liberally season on all sides with kosher salt and freshly ground black pepper. Heat the instant pot high heat in sauté mode and drizzle in 1 T. oil to coat the bottom. Brown the pork pieces on all sides, about 8 to 10 minutes total.

2. Transfer the pork shoulder to a plate and add remaining 1 T. oil in the cooker; leaving the brown bits and removing any burned pieces. Add the onions and a pinch of salt. Sauté until soft and starting to caramelize, then add the garlic and cook for another 2 minutes. Stir in the tomato paste and cook for 30 seconds.

3. Deglaze the pot with the wine, scraping all the bits off the bottom. Stir in the tomatoes with all the juices and the smoked paprika. Then return the pork shoulder and any accumulated juices back to the pot. Nestle bouquet of thyme, rosemary and bay leaves into the juices.

4. Cover the pot and cancel Saute. Choose the meat setting and slide the valve to “seal”. InstaPot will come up to pressure and then cook for 35 minutes. Use the natural pressure release method, then remove the lid. Use a ladle to scoop off and discard the top layer of fat and remove the bouquet garni. Transfer the cooked pork shoulder to a cutting board and shred it apart with two forks, then add it back to the pot with the sauce, stirring to combine. Rewarm sauce when ready to serve over Polenta.

Serves 8 to 10.
1-15 oz. can black beans, rinsed and drained
1/3 cup chopped red onion

Spoon the Salsa over the cream cheese and top with grated cheese.

Bake for 20 to 30 minutes or until cheese is melted and dip is bubbly. I serve it with blue corn tortilla chips, but any chip or cracker is good.

FILET MIGNON WITH CARAMELIZED MERLOT SAUCE Serves 6.
1/4 cup water
1/4 cup sugar
3 T. red wine vinegar
1/4 cup finely chopped shallots 2 T. unsalted butter
2 cups Merlot

2 cups rich veal stock or 1 cup chicken broth and 1 cup beef broth
6 (1 1⁄4 inch thick) filets
Salt and pepper
2 T. vegetable oil
3 T. unsalted butter mixed with 3 T. flour

1. In a small heavy saucepan bring water with sugar to a boil, stirring until sugar is dissolved. Boil syrup, without stirring, until golden caramel forms. Remove from heat and carefully add vinegar down side of pan—caramel will steam and harden. Cook caramel over medium heat, stirring, until dissolved, about 3 minutes. Remove from heat.
2. In a heavy saucepan cook shallots in 2 T. butter over medium heat, until golden, about 4 minutes. Stir in wine and boil until mixture is reduced to about 1 cup, about 15 minutes. Stir in stock or broths and boil until reduced to about 2 cups, about 10 minutes. Remove pan from heat and stir in caramel. Pour sauce through a strainer into a bowl and set aside. (Can be reheated later and served as is over grilled steak or lamb.)
3. Preheat oven to 425 degrees. For meat, pat filets dry and season with salt and pepper. Heat vegetable oil in a large heavy skillet over medium high heat until hot but not smoking. Brown filets on both sides, about 5 minutes total. Transfer filets to a baking pan and roast in oven for about 10 minutes or medium rare (if filets are thinner they will take less roasting time).
4. Pour all fat from skillet and add the sauce, scraping up any browned bits as the sauce comes to a simmer. Add butter flour mixture a bit at a time, whisking to combine. Simmer until thickened. Serve filets with some sauce drizzled over each and pass the remaining sauce.

INDIVIDUAL BEEF WELLINGTON WITH BACON CARAMELIZED
ONIONS AND BOURSIN CHEESE FILLING
3 thick slices bacon, diced
4 small but thick (5 to 6 oz.) beef tenderloin medallions
1 T. unsalted butter
2 large onions, cut in half and then thinly sliced lengthwise Salt and pepper to taste
1 sheet puff pastry
1-5 oz. pkg. Boursin Garlic and Herb Cheese
1 egg, beaten with 1 tsp. of water

Serves 4.
1. Cook the bacon in a large skillet over medium heat until crisp; remove to paper towels to drain. Raise heat in the skillet to medium high. Season beef with salt and pepper and add to the hot bacon fat in the pan. Sear beef, 1 to 2 minutes per side until very brown but beef is not cooked inside. Cool and then refrigerate until ready to assemble the beef wellingtons.
2. Add butter to the skillet used to brown the beef and heat over medium heat. Add the onions and season with salt and pepper. Continue to cook onions until caramelized, stirring often, about 25 minutes. Taste and season with salt and pepper. Stir in bacon and cool and then chill mixture until ready to assemble the wellingtons.
3. Unfold puff pastry and cut into 4 squares. Roll each square out on a floured surface until pastry is large enough to wrap around the steaks. Chill puff pastry until ready to assemble the wellingtons.
4. To assemble the wellingtons, lay the puff pastry squares on a work surface. Place 1/4 of the Boursin cheese in the center of each square. Top with 1/4 of the caramelized onions and finally the beef. Brush the edges of the pastry lightly with the egg wash. Fold two opposite corners of the pastry over the beef and then repeat with the other two corners to completely enclose the beef and filling. Chill at least 1 hour and up 4 hours before continuing.
5. Preheat oven to 425 degrees. Set the wellingtons seam side down on a parchment-lined baking sheet and brush with egg wash all over the top and sides. Bake for about 20 minutes or until puffed and brown and an instant thermometer inserted into the center of the beef reaches 125 degrees. Remove wellingtons immediately to serving plates or to a rack if not quite ready to serve. This keeps the bottom from becoming soggy.

3. Season beef well with pepper and lightly with salt. Heat oil in a large sauté pan over high heat; add the filets and brown well but do not cook the center, about 2 minutes per side. (If frozen, cook frozen Wellingtons at 400 degrees for 20 minutes, then reduce heat to 350 degrees and cook another 30 minutes or until a thermometer inserted into the center of the meat reads 110 degrees.)
7. While beef is chilling after browning, make the sauce in the same skillet used for browning. Melt the butter over medium high heat. Add the shallots, garlic and thyme and cook 1 to 2 minutes to soften. Turn heat off, add brandy and ignite with a long match. Shake the pan until flames burn out. Add the beef broth and bring to a boil, scraping up any browned bits form the bottom of the pan. Boil until reduced by half and then strain out the solids. Return to the pan and add the cream and mustard. Bring to a boil and reduced again by half. Add the green peppercorns and serve. (Sauce can be made the day before and reheated before serving.)

St. Patricks Day Dinner

Corned Beef With A Brown Sugar Glaze
Serves 6 to 8.
4 lbs. corned beef brisket Seasoning packet from corned beef 1 gallon water or as needed
1/2 cup light brown sugar, packed
1/2 cup water
1/2 cup brown mustard

1. Rinse off the brisket under running water, and then trim off excess fat. Place the meat and enough water to cover it in a stock pot; add the seasonings from the package and bring to a boil. Lower the heat so the water simmers gently.
2. Cook until very tender but not falling apart, about 3 hours. About every half hour, skim the fat from the water's surface with a large spoon and discard. Add more water as needed to keep the brisket submerged.
3. Test the cooked meat for tenderness by piercing the meat with a meat fork. It should meet only slight resistance. Remove the meat and transfer to a parchment- lined baking sheet.
4. Preheat oven to 325 degrees. In a sauce pot, combine the sugar and water and bring to a simmer over medium-high heat. When the mixture has turned syrupy, after about 5 minutes, stir in the mustard. Continue simmering another
2 to 3 minutes. Paint a thin coating of glaze over the entire brisket. Put in the oven and bake for 30 minutes, reglazing every 10 minutes. Remove the brisket when the glaze is shiny, and let it rest for 15 minutes. Use a sharp slicing knife to carve thin slices and serve.

Colcannon
Serves 6

Chocolate Dream Crackle Cookie

Always a favorite cookie!
Try substituting crushed candy canes for 1/2 cup of the chocolate chips. Also, try freezing the cookie balls before baking.  Thaw and then roll in powdered sugar before baking.

CHOCOLATE DREAM CRACKLE COOKIES
Makes 48.
1/2 cup unsalted butter
1 1/3 cups sugar
4 large eggs
2 tsp. vanilla
4 oz. unsweetened chocolate, melted
2 cups flour
2 tsp. baking powder
1/4 tsp. salt
1 1/2 cups semisweet chocolate chips
1 cup sifted powdered sugar
1. Beat butter and sugar with mixer until fluffy.  Add eggs, one at a time, beating well after each addition; add the vanilla.  Add melted, cooled chocolate and beat until well blended.
2. Whisk together flour, baking powder and salt and add to batter, beating to mix well.  Stir in chocolate chips.  Cover and refrigerate 1 hour or longer to firm up dough.
3. Preheat oven to 350°F.  Shape dough into 48 (1 1/4 inch) balls.  Roll balls in powered sugar to coat.  Place balls 2 inches apart on parchment-lined baking sheets and bake 9 minutes.

Do not over bake.  Cookies will be soft, but will firm up as they cool.  Cool 2 minutes on pans, then remove to rack to cool completely.
