Asparagus Wine Pairing
To choose a wine to serve with asparagus, the best choice would be to select a Riesling, probably one with just a hint of sweetness and a good acid backbone. Other options might include a Sauvignon Blanc, Grüner Veltliner, Pinot Gris or a Sparkler: stellar cool climate wines. 

The choice of a white wine will then dictate the elements in the rest of the meal.

 

To begin, prepare a salad of mixed greens, goat cheese, toasted walnuts and a very light vinaigrette. (Riesling is often wine of choice by chefs looking for something that works with salad greens, so it works well here too.)

 

Then for the entrée, chicken is something that is complemented by Ohio's most widely grown vinifera.  A baked herb-roasted or grilled chicken breast with garlic and garnished with fresh thyme will be both attractive on your plate and very enjoyable to taste.


Side dishes might include some creamy Parmesan risotto (the acid backbone in the Riesling will cut both the starch and creaminess). Either grill or roast the asparagus, drizzle a bit of olive oil, gently sprinkle some sea salt and squeeze just a bit of lemon juice on the top.


Add some warm, crusted sour dough bread with fresh herbed butter.

Spinach Stuffed Chicken Breasts
Juicy, cheesy, and full of flavor, this Spinach Stuffed Chicken is the perfect keto-friendly dinner. Each serving has 3.2g net carbs and a whopping 47g of protein, making it a satisfying weeknight meal that's both healthy and indulgent.

Ingredients
 

4 medium chicken breasts, boneless and skinless
8 ounces (226.8 g) frozen chopped spinach, thawed and drained
1/4 cup (59.15 ml) butter, divided
4 garlic cloves, minced, divided
Salt and pepper
1/2 cup (118.29 ml) whole milk ricotta
1/2 cup (118.29 ml) shredded mozzarella
1/4 cup (59.15 ml) grated Parmesan
1/2 tsp (0.5 tsp) paprika
Directions:
Preheat the oven to 350ºF. Squeeze as much moisture as possible out of the spinach. 
In a medium bowl, combine the spinach, ricotta, mozzarella, Parmesan, and 2 cloves of the minced garlic. Season with salt and pepper and mix well to combine.
Using a sharp knife, slice each chicken breast horizontally through the center, but don't cut all the way through. Open each breast like a book.
Stuff each chicken breast with 1/4 of this mixture and secure the opening with several toothpicks. Season the top and bottom of the breasts with paprika, salt, and pepper.
Heat a large ovenproof skillet over medium heat. Add the butter to the pan and let melt. Once hot, add the remaining garlic and then add the chicken breasts. Cook until golden brown on the outside, about 3 to 4 minutes per side.
Place the entire skillet in the oven and cook until the chicken reaches 165ºF on an instant read thermometer, about 20 minutes.

Want to prep your stuffed chicken breast ahead of time? No problem!       
Proceed through Steps 1 to 3.      Then refrigerate the chicken breasts for up to 8 hours before cooking. Be sure to cook thoroughly and make sure the breasts AND the filling reach an internal temperature of at least 165ºF.

Valley Kitchen Cobb
The best versions honor the classic formula while introducing subtle innovations. 6 servings
Ingredients:
3 hard-boiled eggs
6 slices thick-cut lardon
3 heads organic baby mixed green lettuce
3 cups free range chicken breast, chopped
1 cup cherry tomatoes
¾ cup Point Reyes blue cheese, crumbled
3 green onions, chopped
1 fresh avocado, peeled, pitted and diced
8 ounces creamy blue cheese dressing
1 cup cucumber, sliced
Directions:
Place eggs in a saucepan and cover completely with cold water; bring to a boil, then cover and remove from heat.

Let eggs sit for 10-12 minutes, then cool, peel and chop.

While the eggs are cooking, place lardon in a sheet pan. Cook over medium-high heat until evenly brown, 10-12 minutes. Drain, chop and set aside.

Divide the organic lettuce among individual plates. Top with rows of lardon, eggs, free range chicken, cherry tomatoes, blue cheese, English cucumber and avocado.

Drizzle with the creamy blue cheese dressing.

Herb Crusted Air-fryer Chicken Breast

Use a brine for extra tender chicken. A simple mixture of water and 
salt does a lot to create delicious, juicy meat. Let the chicken soak for 
as little as 20 minutes but no longer than 12 hours. After that, the meat will start to break down.  Get creative with seasonings. This recipe 
includes my favorite blend of spices, but you can use whatever you 
want! Stick with simple garlic and onion powder or try a Poultry Seasoning blend.  Add oil to prevent sticking. Brush it on the surface 
to help the seasonings stick, then give your chicken a quick spray on 
both sides before adding to the air fryer basket. 

Rest before slicing. Just 5 minutes is enough. This allows the juices to redistribute through the meat so each bite is extra delicious.
Check for doneness before serving. You can’t go by sight alone! Use 
a digital meat thermometer for best results — if it’s not done yet, you 
can just cook for longer. If you don’t have one, slice into the chicken. 
It should be white all the way through and the juices should run clear.

Ingredients 

  • 4 boneless, skinless chicken breast
  • 3-4 cups warm water
  • 1/4 cup kosher salt, for brine
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1 tablespoon parsley

Instructions

  • Stir the ¼ cup of salt and warm water into a bowl and stir. Add the chicken breasts and set aside for 20 minutes to brine, or refrigerate and brine for up to 12 hour
  • After the chicken brine’s, drain from the liquid and rinse the breasts under cold water.
  • In a small bowl, combine the seasonings until well blended.
  • Pat the rinsed chicken breasts dry and spray both sides with the cooking spray.
  • Rub the seasoning mixture onto the chicken breasts on both sides to coat evenly.
  • Working in batches if needed, place chicken breasts in your air fryer basket and set the air fryer setting to 375F. Cook for 14-16 minutes, flipping halfway. Chicken is finished cooking when the internal temperature reaches 165F.
  • Let cooked chicken rest on a plate covered with foil for 5-6 minutes before garnishing with parsley, and serving. 
  • Plate, serve, and enjoy!
