Herb Crusted Air-fryer Chicken Breast

Use a brine for extra tender chicken. A simple mixture of water and 
salt does a lot to create delicious, juicy meat. Let the chicken soak for 
as little as 20 minutes but no longer than 12 hours. After that, the meat will start to break down.  Get creative with seasonings. This recipe 
includes my favorite blend of spices, but you can use whatever you 
want! Stick with simple garlic and onion powder or try a Poultry Seasoning blend.  Add oil to prevent sticking. Brush it on the surface 
to help the seasonings stick, then give your chicken a quick spray on 
both sides before adding to the air fryer basket. 

Rest before slicing. Just 5 minutes is enough. This allows the juices to redistribute through the meat so each bite is extra delicious.
Check for doneness before serving. You can’t go by sight alone! Use 
a digital meat thermometer for best results — if it’s not done yet, you 
can just cook for longer. If you don’t have one, slice into the chicken. 
It should be white all the way through and the juices should run clear.

Ingredients 

  • 4 boneless, skinless chicken breast
  • 3-4 cups warm water
  • 1/4 cup kosher saltfor brine
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1 tablespoon parsley

Instructions

  • Stir the ¼ cup of salt and warm water into a bowl and stir. Add the chicken breasts and set aside for 20 minutes to brine, or refrigerate and brine for up to 12 hour
  • After the chicken brine’s, drain from the liquid and rinse the breasts under cold water.
  • In a small bowl, combine the seasonings until well blended.
  • Pat the rinsed chicken breasts dry and spray both sides with the cooking spray.
  • Rub the seasoning mixture onto the chicken breasts on both sides to coat evenly.
  • Working in batches if needed, place chicken breasts in your air fryer basket and set the air fryer setting to 375F. Cook for 14-16 minutes, flipping halfway. Chicken is finished cooking when the internal temperature reaches 165F.
  • Let cooked chicken rest on a plate covered with foil for 5-6 minutes before garnishing with parsley, and serving. 
  • Plate, serve, and enjoy!
