Impossible Coconut Cream Pie

Ingredients:
Crust
1 cup flour
1/3 cup vegetable oil
1/2 teaspoon salt
3 Tablespoons water

Filling
2 eggs
1/4 cup+ 2 tablespoons sugar
1/4 cup flour
1/2 teaspoon baking powder
1/8 teaspoon salt
1 cup milk
1 teaspoon vanilla extract
2 tablespoons (1/2 stick) melted butter*
   1/2 stick is 4 tablespoons ?????
3 1/2 oz. sweetened flaked coconut

Directions:
Grease a 9 inch pie plate and set aside.  

Crust
Combine the flour, oil, salt and water in a bowl and mix to combine.  Generously flour a clean surface and roll the crust out to fit your pie plate.  Carefully place the crust in the pie plate and set aside.

Filling:
Preheat the oven to 350.  In a large bowl beat the eggs well.  Add the sugar, flour baking powder, salt milk, vanilla and melted butter.  Mix well.  Fold in the coconut.  Spoon into the pie crust.  

Bake at 350* for 45 minutes or until golden brown.  The center will still be a bit jiggly in the middle.  Let set for a couple of hours and then refrigerate.  Serves 8
