Lebkuchen Alice Smith
Whip until foamy:
4 eggs
180g icing sugar
Add mixing in all spices and nuts:
a pinch of ground cloves
a pinch of ground nutmeg
1 tablespoon cinnamon
dash of salt
the peel of one organic lemon
175g ground almonds
175g ground hazelnuts
175g candied lemon peel
85g candied orange peel
45 wafer papers for baking 7cm
Glaze or icing;
150g icing sugar
water
chocolate overture
Melt a ready made package of chocolate couverture OR mix 3-4 tablespoons water with 150g icing sugar and spread on top of the Lebkuchen.
Bake in a 200C oven for about 25 minutes.
