Fresh Tomato Salsa
Ingredients:1 1/2 lbs. fresh tomatoes, cored and cut into 1/2" pieces
1/2 cup red onion, finely chopped
1/4 cup fresh cilantro, chopped
1 large jalapeño chile, stemmed, seeds reserved,and minced
1 small garlic clove, minced
2 teaspoons lime juice, plus extra for easosning
Salt and Pepper

Directions:
Place tomatoes in colander and let drain for 30 minutes. As tomatoes drain, layer onion, cilantro, jalapeño, and garlic on top. Shake colander drain excess juice, then transfer vegetables to serving bowl. Stir in lime juice. Salsa can b refrigerated up to 3 hours. Add reserved jalapeño seeds to increase heat as desired. Season with salt and pepper, sugar and extra lime juice to taste before serving. Makes about two cups.
