Butter-Nut Ball Cookies ~ Rosso
Ingredients:
1/2 lb. butter (2 sticks)
1/2 cup sugar
2 eggs, separated
1 teaspoon almond flavoring
2 3/4 cup flour
1 teaspoon baking powder
1 cup chopped nuts
candied cherries or almond
Directions:
Cream butter and add sugar gradually, add the egg yolks one at a time mixing well after each addition. Add almond flavoring. Blend flour, baking powder, and chopped nuts: add gradually to creamed mixture.
Roll into balls, then into beaten egg whites and chopped nuts. Place on parchment lined cookie sheet and press half a candied cherry into the top of each ball flattening it.
Bake only till straw-colored 25 to 30 minutes at 325 degrees.
