Roasted Cauliflower

Roasted Cauliflower Recipe

Ingredients:
1 head of cauliflower 
2 or 3 garlic cloves, minced
1 tablespoon lemon juice
Olive oil
Coarse salt
Freshly cracked black pepper
Grated Parmesan Cheese 

Directions:
Place the olive oil, freshly cracked pepper and coarse salt, lemon juice, and garlic cloves in a bowl that will hold the amount of cauliflower you are preparing.  Allow the flavors to meld for about 1/2 hour. 

Preheat oven to 400F.

Cut the cauliflower florets into fairly uniform pieces and place in the bowl of oil and seasonings and toss to coat well.  Place on a prepared baking sheet with sides in a single layer.

Bake uncovered until lightly browned, 20 to 30 minutes.  Test for doneness when pierced it is tender.

Place in serving bowl and top with freshly grated Parmesan cheese.  Serve immediately!
