Great Potato Salad
Ingredients:
7 medium potatoes
Dressing:
10 Tablespoons sugar
7 Tablespoons vinegar
3 eggs
2 teaspoons mustard
Mayonnaise
Directions:
Boil the potatoes with the skins on. When cool, peel and dice.
To make sauce: Add sugar to vinegar and then to beaten eggs. Cook over medium heat until the mixture begins to bubble and thicken. Pour over the diced potatoes. Blend the 2 teaspoons of mustard with the mayonnaise and add until you have the desired creaminess.
