Apricot Cheese Delight
Ingredients:

Gelatin Layer
1 29 oz. can apricots, drained and chopped. Save
juices
1 29 oz. can crushed pineapple, drain and save juices
1 6 oz. box orange jello
2 cups boilling water
1 cup combined pineapple and apricot juices
3/4 cup miniature marshmallows
Directions: Gelatin Layer:
Drain and chill fruits, reserving juices. Dissolve gelatin in 2 cups boiling water. Add 1 cup of combined juices. Chill until slightly congealed. Fold in fruit and marshmallows. Pour into a 11 X 7 X 2 baking dish. Chill until firm.
Topping:
1/2 cup sugar
3 tablespoon flour
1 egg, slightly beaten
1 cup combined juices
2 tablespoons butter
1 cup whipping cream, whipped OR 1 carton Cool
Whip
Shredded Cheddar cheese
Directions Topping:
Combine sugar, flour, and beaten egg, with combined juices. When well blended cook until thickened. Remove from heat and add butter. Set aside to cool. When cool fold in whipped cream or cool whip and spread on jello layer. Garnish with shredded cheddar cheese.
