Heavenly Banana Nut Bars
Ingredients
2/3 cup shortening
1 1/2 cups sugar
2 egg yolks
1 cup mashed banana pulp (ripe)
1 1/2 cups cake flour
1 teaspoon baking soda
1/4 teaspoon salt
4 tablespoons sour cream
1/2 teaspoon vanilla
2 egg whites, well beaten
1/2 cup chopped walnuts
Directions:
Cream sugar and shortening: Add two egg yolks and mix well. Now add the 1 cup of banana pulp. Sift the flour and carefully measure the soda and salt. Sift again.
Alternate these dry ingredients with the sour cream while adding to the first mixture. Mix thoroughly.
Add the vanilla, egg whites well beaten, and the chopped walnuts.
Place mixture in an 8 X 11 baking pan or dish, Bake in 300*F oven for one hour. When cool cut in bars and roll in confectioner sugar.
Recipe can be mixed with one-half of the ingredients but requires one hour baking time.
