Lemon Bars
Ingredients:
Crust:
1/2 cup powdered sugar
2 cups flour
1 cup butter melted
Topping
4 eggs, lightly beaten
6 tablespoons lemon juice
2 cups sugar
4 tablespoons flour
1/2 teaspoon baking powder
Directions
For the crust:
Spray 9 X 12 baking pan with vegetable spray.
Mix powdered sugar, flour and margarine.
Form mixture evenly in bottom of pan.
Bake at 350*F for 20 minutes.
Topping:
While the crust is baking, mix the beaten eggs, lemon
juice, sugar, fold in flour and baking powder.
Pour on top of crust and bake at 350*F for 25 minutes.
Sprinkle with powdered sugar while still warm.
Cut into 12 squares or 24 triangles.
