Sweet Pickle Potato Salad

 SWEET PICKLE POTATO SALAD 

5 lbs. russet potatoes
1 onion chopped
1 cup diced sweet pickles
1- 8 oz. bottle Wishbone French dressing (the orange kind) Mayonnaise, 1 to 2 cups
4 hard-boiled eggs, chopped
Salt and pepper

1. Peel potatoes and cut into 1-inch cubes. Place potatoes in a large pot of cold water and bring to a boil. Add 2 tsp. salt to the water and then simmer potatoes until cooked and tender but not falling apart.

2. Drain potatoes and transfer hot to a large bowl. Add the onions, pickles and French dressing, toss to coat potatoes well. Let stand or chill until coldup to overnight.

3. When ready to serve, stir in eggs and enough mayonnaise to make a creamy dressing. Season to taste with salt and pepper. Refrigerate until serving time that day.   Serves 8 to 12
