Salsa Verde Queso Fundido
With Corn And Roasted Chilies
Ingredients1 cup Salsa Verde (Trader Joe’s)
1/4 cup crema or thinned sour cream
2 poblano chilies, roasted, peeled and cut into strips
1 cup frozen Roasted Corn frozen (Trader Joe’s), thawed
3 cups grated Jack cheese
2 T. chopped fresh cilantro
12 to 16 “street taco” size corn tortillas
Directions:
Preheat oven to 375 degrees. Combine Salsa Verde, Crema and Chilies in a medium skillet. Heat over medium heat until mixture bubbles and thickens, about 4 minutes. Transfer to a baking dish or deep pie plate. Top with corn and then cheese. Bake for 15 minutes or until the cheese melts. Sprinkle with cilantro.
While Queso Fundido is warming, heat the tortillas. Either place tortillas in a zip loc bag with a couple drops water and microwave on HIGH power for 1 minute or wrap in foil with a few drops of water and bake along with the Fundido.
Serves 6 or 8
