Beans And Greens
Ingredients:
2 tablespoons EVOO
1 small white or yellow onion. minced
2 garlic cloves, minced
1/2 serrano chili, minced
About 4 cups chopped greens, washed and still wet
About two cups Rancho Gordo beans in their broth
Salt
Directions:
In a large skillet, warm the oil over medium heat. Add the onions and cook until soft, about 5 minutes. Add the garlic and chile; sauté until fragrant, about 2 minutes more. Add the wet greens and toss, stirring until wilted. The timing will depend on the type of green you are using.
Add the beans and their cooking liquid; stir gently until combined. Let simmer until some of the cooking liquid evaporates and the beans are warm. Add salt to taste. Serves 2 to 4
