Sage Darby & Turkey Grilled 
Cheese with Cinzano Ketchup
Commonly found in good grocery stores and cheese shops, Sage Darby (pronounced “DAR-bee”) is a firm British cheese mottled with veins of sage—it tastes like fall. If you can’t find it, a good-quality aged cheddar and a little chopped fresh sage will do the trick.

Cinzano Ketchup  Makes 3 cups
1 can (396 mL) tomato paste
1 cup (250 mL) corn syrup
1 cup (250 mL) red wine vinegar
1 cup (250 mL) sweet vermouth 
1/2 tsp (2 mL) onion powder
1/2 tsp (2 mL) garlic powder
1/2 tsp (2 mL) finely ground black pepper
1/4 tsp (1 mL) ground cloves
1/4 tsp (1 mL) ground allspice
1/4 tsp (1 mL) ground coriander
Grilled Cheese Sandwich
4 slices brioche
6 oz (170 g) sliced roasted turkey
6 oz (170 g) sliced Sage Darby cheese
1/4 (60 mL) cup butter

Directions:                                                                                                To make ketchup, combine all ingredients in medium pot and bring to a simmer. Allow to cook over low heat for 20 minutes, stirring often. Remove from heat and cool completely. Pass through fine-mesh sieve and transfer to airtight container. Refrigerate up to 1 month. (Since this will make more than you need, you can freeze leftovers up to 6 months. It’s a versatile condiment that can stand in anywhere you’d normally use ketchup: fries, eggs, burgers, etc.)

To make grilled cheese, butter two slices of brioche thoroughly and place them butter side down. Divide cheese and turkey between slices. Top with remaining brioche slices. Butter tops thoroughly.

Heat a nonstick frying pan over medium-low to medium heat. Add sandwiches. Cook until well-browned and cheese is melted, 4 to 5 minutes per side. Serve with Cinzano ketchup.
Makes 2 sandwiches, 3 cups (750 mL) ketchup
