One Dish And Dinner In Thirty
Ingredients
1 pint grape tomatoes1/2 bunch broccolini, cut in one-inch pieces.
8 ounces mushrooms, cleaned and quartered
1 small onion, diced
2 tablespoons EVOO
2 tablespoons EVOO
1 teaspoon dried or fresh rosemary
1 teaspoon dried or fresh thyme
3/4 teaspoon salt
1/4 teaspoon fresh ground pepper
1 pound orzo
3 cups vegetable broth
3 ounces grated parmesan cheese
3/4 cup mozzarella cheese
Directions:
Preheat oven to 400 degrees. 9 X 13 inch baking dish.
Coat all vegetables with EVOO: add S&P, rosemary, thyme.
Place in baking dish. Bake 15 minutes.
Remove from oven, add orzo, and 3 cups vegetable stock. Cover with foil and bake 10 minutes more.
Remove from oven. With the back of a spoon, burst the tomatoes.
Add the parmesan cheese and mix well. Top with mozzarella cheese.
Return to oven for another 5 to 10 minutes.
NOTE: I made this dish with substitutions. I added sausage for protein, Brussels sprouts instead of Broccolini, and Shell Macaroni instead of orzo because I had it on hand. I will make this dish frequently. De-Lish
