Super Simple Salad Dressing

Super Simple Dressing
This dressing is tasty with mixed greens, mild butter lettuce, arugula, or spinach.  Use up leftover herbs, such as chives, mint or parsley in the salad mix for a bright flavor.  Yield 1 cup.
Ingredients:
1/4 cup apple cider vinegar
1 heaping tablespoon  minced shallot (about 1/2 small shallot)
1 teaspoon Dijon mustard or grainy German style mustard
1/2 cup extra virgin olive oil
1/2 teaspoon kosher salt
Fresh ground black pepper
Directions 
Place the vinegar and shallots in a small glass jar with a tight fitting lid.  Let set for 10 minutes so the shallots marinate in the vinegar and loose their sharp raw flavor.  This is an important step that makes a difference in the final flavor outcome.

Add the mustard, olive oil, salt and pepper to the container, seal tightly and shake well to combine.  Taste and adjust the seasonings if necessary.  Keep refrigerated up to two weeks.  Bring to room temperature and shake well before using with salad greens.

Variations: Use 1 teaspoon minced garlic instead of the shallot.  Try champagne vinegar  or lemon juice instead of the apple cider vinegar.  Or us balsamic vinegar and add about a teaspoon of honey for a touch of sweetness.
