German Red Cabbage With Apple ~ Apfelrotkohl

German Red Cabbage With Apple
Ingredients:
2 pounds red cabbage, 
2 onions, sliced thin
3 granny smith apples, peeled and chopped
2 Tablespoons butter
1 bay leaf
4 cloves
1 cinnamon stick
2 1/2 ounces red wine vinegar
4 1/2 ounces water
2 tablespoons sugar
1 teaspoon salt
Directions:
Cut the head of cabbage into quarters and cut in shreds.  Pour the wine vinegar over the cabbage and toss gently.  Set aside.

Melt butter in a large saucepan and sauté the onion slices.  Stir and cook until softened. When softened add apple dices, cloves, bay leaf, and cinnamon stick, water, sugar, and salt.  Stir and cook until softened.

Place the lid and allow to cook on medium low heat for about 1 hour.  Stir from time to time to prevent the bottom layer from burning.

Remove the cinnamon stick, cloves, and bay leaf.  Allow to cool slightly before serving.
