Mashed Potatoes With Oil And Poached Egg.
Pure All'olio Con Uovo In Camicia
This recipe had appeal with mashed potatoes rather than frying the potatoes.  This is an any meal dish.
Ingredients
2 pounds yellow potatoes
4 eggs
3 1/2 cups water
2 tablespoons white wine vinegar
8 ounces EVOO
Salt to taste

Directions:
Peel the potatoes and place in a pan covered with water.  Bring water to a boil and add the salt to taste.  Cook until tender when pierced with a fork.  Put through a potato ricer and add EVOO and stir as if making mayonnaise.  Keep warn.

Place a cracked egg in each of four glasses.  As soon as the water with added vinegar begins to boil.  Stir with a whisk to create a well in the middle and place an egg.  The white will cook quickly and coat the egg yolk.  The white will be cooked but the yolk lukewarm.  Repeat with the other eggs.  

Place the mashed potatoes in four bowls and top with an egg.  It can be served with grated cheese or capers.
