Creamy Vegetable Soup

Creamy Vegetable Soup
A nutritious soup made with six vegetables and made creamy with milk instead of cream and made in thirty minutes. Packed full of vegetables, herbs, and spices, this flavorful soup leaves you satisfied while not being too heavy. There is simply nothing better than holding a warm bowl of soup when it’s chilly out, and we always make sure the bowl is full to the brim!
Ingredients:
2 tablespoons salted butter
1 tablespoon olive oil
1 medium white onion diced
3 medium celery ribs sliced
4 medium carrots
1 tablespoon minced garlic about 3 cloves
6 ounces frozen cut green beans
4 ounces sliced mushrooms
6 ounces frozen broccoli florets
6 ounces frozen corn kernels or canned1 teaspoon dried thyme
1 teaspoon dried oregano
3 tablespoons all-purpose flour
4 cups whole milk
2 cups vegetable broth
1/2 teaspoon salt or to taste
1/2 teaspoon black pepper or taste

Directions:
Heat 2 tablespoons salted butter and 1 tablespoon olive oil in a dutch over medium heat. Add 1 medium white onion, 3 medium celery ribs, and 4 medium carrots. Cook for 3–4 minutes until the onion softens, stirring occasionally.

Stir in 1 tablespoon minced garlic, 6 ounces frozen cut green beans, 4 ounces sliced mushrooms, 6 ounces frozen broccoli florets, and 6 ounces frozen corn kernels. Cook for 2–3 minutes. Mix in 1 teaspoon dried thyme, 1 teaspoon dried oregano, and 3 tablespoons all-purpose flour, stirring constantly for 1–2 minutes to cook the flour.

Slowly pour in 4 cups whole milk and 2 cups vegetable broth, stirring continuously. Bring to a gentle boil, then reduce the heat to a simmer.

Taste and season with1/2 teaspoon salt and 1/2 teaspoon black pepper, adjusting to taste, and let simmer for 6–7 minutes, stirring occasionally, until the soup thickens

Fresh Corn Carbonara 5*****

Fresh Corn Carbonara
A raw creamed corn sauce takes the place of the traditional eggs in this silky summer-fresh "carbonara."  This is a 5***** dish!
Ingredients:
12 ounces spaghetti or linguine
Kosher salt
6 slices thick-cut bacon (about 6 ounces), cut into 1/4" strips
4 ears of corn, kernels cut off (about 3 cups), cobs reserved
1/2 cup heavy cream
Freshly ground black pepper
1/2 cup grated Parmesan (about 2 ounces), plus more to serve
1/2 cup fresh basil leaves, coarsely chopped, divided

Directions
Cook spaghetti in a large pot of boiling salted water, stirring occasionally, until al dente; drain.

Meanwhile, fry bacon in a large skillet over medium-high heat, stirring occasionally, until crisp. Using a slotted spoon, transfer bacon to paper towels to drain (reserve fat). 

Scrape excess corn milk from cobs into a blender by firmly running the back of a chef's knife down the sides.   Freeze the cobs for later use for adding flavor broth or stock 

Add cream, half of the corn kernels, 1/4 tsp. salt, 1/4 tsp. pepper, and 2 Tbsp. reserved bacon fat. Purée until a smooth sauce forms.

Toss hot pasta with corn sauce, 1/2 cup Parmesan, and half each of the remaining corn kernels, bacon, and basil in a large bowl.

Divide pasta among bowls and top with remaining corn kernels, bacon, and basil. Season with pepper and top with Parmesan.    Serves 4

​Shrimp Enchiladas with Yellow Mole Sauce​

Shrimp Enchiladas With 
Yellow Mole Sauce
A delicious recipe for Shrimp Enchiladas, filled with tender garlic shrimp, sweet corn, and lime zest, lathered in a flavorful
Yellow Mole Sauce. Vegetarian-adaptable

 Ingredients:

Yellow Mole Sauce:
pinch saffron with hot water
3 tablespoons olive oil
1 onion, white or yellow, rough chopped
4 garlic, rough chopped
2 yellow bell peppers (or one orange and one yellow for BEST color)
1 3/4 cups chicken broth
1/2 cup pumpkin seeds (or raw cashews)
2 teaspoons coriander
1 teaspoon cumin
1/8–1/4 teaspoon cayenne
3/4 teaspoons salt, more to taste
1/2 teaspoon pepper
1/2 teaspoon turmeric, optional, for color.
1 1/2 tablespoons lime juice (zest it, save for filling)
Shrimp Enchilada Filling:
1 tablespoon butter
2 garlic cloves, rough chopped
1 – 2 tablespoons jalapeno, finely chopped
1 lb shrimp, raw, peeled and deveined, chopped
1 1/2 cups corn, fresh is nice, frozen is fine
1 teaspoon dried oregano
1 tablespoon lime zest
1 teaspoon Salt
1/2 teaspoon pepper
1 1/2 –2 cups shredded mozzarella or queso fresco, divided (6 ounces)
1/4 cup cilantro
8 x 6-inch corn tortillas 
Garnish: cilantro, radish, misogreens
Directions:
Preheat oven to 375F.
Make the yellow mole sauce:
Pour 2 tablespoons boiling water over the saffron, and let sit. In a large skillet, heat the oil over medium heat. Saute onion, bell pepper and garlic, and cover to let this steam and soften for about 5 minutes. Add coriander, cumin, cayenne (go light, add more to taste later) salt, pepper and saffron water. Stir one minute. Add the stock and pumpkin seeds. Bring to a simmer, cover, and simmer gently for 10-15 minutes until pumpkin seeds have softened. Let this cool. Add the lime juice. Blend until creamy, and silky smooth. You could do this ahead. Taste and adjust the cayenne to your liking. If you want to bump up the yellow color, add 1/2 teaspoon ground turmeric.

Make the enchilada fillingChop the shrimp into small pieces. Heat the butter and garlic over medium-low heat. Add the shrimp and jalapeno and saute 2-3 minutes. Add the corn, oregano, lime zest, and salt. Once the shrimp is cooked, turn off the heat. If it is liquidy, drain. Stir in the cilantro, and add  1/2 cup of the mole sauce and half of the cheese.

AssembleWarm the tortillas (so they are pliable and don’t crack when rolled) either in the oven, microwave, pan-sear or heat over a gas flame-then wrap up in a towel. Grease a 9×13-inch baking dish. Place roughly 1/2 cupof the filling in each tortilla, rolling one at a time, placing seam side down in the baking dish. Lather with the sauce- you won’t need all -save the extras for plating. Sprinkle with cheese. 
Bake uncovered until golden and melty, 20-25 minutes. 
If serving like the photo above, heat the remaining mole sauce in a small saucepan. 

Spoon a little mole sauce on a plate, place the enchilada over the top. Top with thinly sliced radishes and a sprinkling of chopped cilantro. Micro greens are nice here too.
Notes
These can be made a day ahead and refrigerated- be sure to bring to room temp before baking.

Directions:
Salad Dressing   The ingredients in this salad are all commonly found in Mexican food and so are well matched with a Mexican-flavored vinaigrette. This vinaigrette combines a little chili powder and lime juice with olive oil and red wine vinegar. Start with the juice of half a lime, but keep the other half near by so you can dress the salad to your taste.

Corn Risotto ~ James Beard Great American Chef Rally

The first time that I enjoyed Corn Risotto was when I attended the James Beard Great American Chef Rally in Milan Italy, June 2015.  Chefs of heads of government from around the world were in attendance.  An interesting dialogue with the theme, "How Will We Feed The Population of The World in 2050" followed introductions.   I requested my photo taken with President Obama's private chef, Cristeta Comerford and she obliged.  We also toured the Lisbon Bakery which is home to the world famous Panetonne and a winery famous for its Prosecco.  This Rally was held in conjunction with the "EXPO 2015".

Ingredients:
Produce
  • 2 tablespoons Chives, fresh
  • 1 Garlic clove
  • 1 Shallot
  • 3 sprigs Thyme, fresh
Condiments
  • 1/2 teaspoon Lemon juice, fresh
Pasta & Grains
  • 1 1/2 cups Arborio rice
Baking & Spices
  • 1/2 teaspoon Black pepper
  • 2 teaspoon Salt
Dairy
  • 2 tablespoons Butter
  • 1/2 cup Parmesan cheese, grated
  • 1/4 cup Sour cream or creme fraiche
Liquids
  • 4 1/2 cups Water, hot
Other
  • 4 Large or 6 medium ears corn, 4 cups of kernels cut from cobs, divided, cobs reserved to make corn purée

    Directions:
    Prepare and measure all ingredients before you begin.
    Place olive oil in heated pan, add diced shallot and minced garlic.  When translucent add Arborio rice; stir to coat grains.  When edges appear to be lightly toasted add the 4 1/2 cups hot water and 2 thyme sprigs, stir and place the lid.  Reduce heat to medium low.  Cook for 15 to 17 minutes.  Stir twice, until al dente.

    Add 1/2 cup Parmesan cheese and corn liquid, continue cooking while stirring for three minutes.

    Add corn kernals and continue to cook 5 additional minutes.

    Remove thyme sprigs: add fresh lemon juice, creme fraiche, 1 cup corn kernels.  Add additional hot water if necessary.

Summer Taco Salad

Summer Taco Salad
This taco salad is fresh, tangy, flavorful, and hearty enough to be a meal. The dressing gets its creamy consistency from Greek yogurt, jazzed up with lime juice and chipotles in adobo.

Ingredients:

Which beans to use? We like creamy and firm beans like Bayo or Flor de Junio

 
The details

Serves: 6-8
Time: 40 minutes (plus bean cooking)
Cookware: rimmed baking sheet, grill, small bowl, large bowl
 
What you’ll need
Chipotle-yogurt dressing
2 garlic cloves, finely minced 
Juice of 1 large lime
¾ cup Greek yogurt
½ to 1 chipotle with a little adobo sauce, finely chopped (if you don’t want that much heat, skip the chipotle and use 1-2 tsp sauce)
¾ tsp honey
½ tsp coarse salt, plus more to taste
The rest
8 corn tortillas, cut into thirds and then ½ inch strips
Olive oil
Coarse salt and freshly ground pepper
3 ears of corn, shucked and silk removed
1 head romaine lettuce, roughly chopped into 1-inch pieces
1 bunch lacinato kale, stems removed and roughly chopped in 1-inch pieces
1-½ cups of strained beans from a batch of beans (cooked according to our guide)
1 avocado, cubed
6 radishes, thinly sliced
⅓ cup grated cotija cheese, plus more for serving
Toasted pepitas, for serving
Lime wedges, for serving

 

Directions:

Prepare the dressing: In a small bowl, combine garlic and lime juice; set aside for 5 minutes to let the garlic flavor mellow. Stir in remaining ingredients and season with salt to taste.

Make the tortilla strips: Preheat the oven to 350 degrees. Place tortilla strips on a rimmed baking sheet; toss with a little olive oil and season with salt. Spread in a single layer and bake until golden and crisp, stirring halfway through, 8-10 minutes. Let cool.

Grill the corn: Heat the grill over medium-high. Brush ears of corn with olive oil and season with salt and pepper. Grill, turning occasionally, until kernels are tender and charred in spots, 10-12 minutes. (Alternatively, you can broil the ears of corn, turning occasionally until tender and charred.) Once cooled enough to handle, cut the kernels from the cobs. 

Assemble the salad: In a large bowl, toss lettuce and kale with half the dressing. Add corn kernels, beans, avocado, radishes, and cotija cheese. Toss gently to combine. Add more dressing to taste and season with salt. To serve, garnish with tortilla strips, roasted pepitas, and lime wedges, and top with more cotija cheese.

Ultimate Chicken Casserole

Ultimate Chicken Casserole

Ingredients:
2 cups egg noodles, cooked
2 cups chicken, cooked/shredded
2 cups corn *I used frozen, canned works too
1 cup milk
2 cans cream of chicken soup*10 oz cans
1 onion, diced
1 tbsp garlic, minced
1/2 cup cheese, shredded  (cheddar, any type works)
1/2 cup bacon, cooked/chopped
3/4 cup French fried onions
salt/pepper (to taste)

Directions:
Preheat oven to 350 degrees and grease a 9x13 baking pan with cooking spray.

In a medium bowl, combine the cooked pasta, chicken, corn, milk, cream of chicken, onion, garlic, cheese, bacon, and salt/pepper.Pour mixture into greased pan.


Sprinkle French fried onions evenly on top.
Place pan into preheated oven and bake for about 30 minutes.
Remove from oven and serve warm!

Grilled Corn Quesadillas


Grilled Corn Quesadillas
Vegetarian



Ingredients:

2 ears fresh corn
1/2 cup chopped red pepper
3 chopped green onions
2 tablespoons chopped cilantro
Juice from 1 lime
1/2 teaspoon salt
1/4 teaspoon chili powder
6 (8-inch) flour tortillas
2 cups shredded Monterey Jack cheese
    Directions:

    Heat a grill to medium-high heat. Shuck and clean the corn and grill the corn until it is charred. Let cool, then cut the kernels from the cobs.
    In a bowl, combine 
    the corn, bell pepper, green onions, cilantro, lime juice, salt and chili powder. 
Heat a large skillet over medium heat. Spray with nonstick cooking spray and lay one of the tortillas in the skillet. Add one-sixth of the cheese to half of the tortilla and then top the cheese with one-sixth of the corn mixture. Fold the tortilla over. 

Cook until browned on the bottom, then flip over to brown the other side and finish melting the cheese. Remove from the skillet and cut into wedges.

Repeat with the remaining tortillas, cheese, and filling.

Southwestern Quinoa Salad


A flavorful and healthy southwestern 

quinoa salad with roasted sweet 
potatoes, black beans, and avocado.

Ingredients:
1 cup uncooked quinoa, rinsed and drained
1 large sweet potato, chopped into bite-size chunks
1 red or orange bell pepper, cored, seeded, and diced
1 cup black beans, rinsed and drained
1 cup thawed frozen corn
1/4 cup minced red onion
1/4 cup minced fresh cilantro
1 avocado, chopped
1/4 cup + 1/2 Tablespoon olive oil
juice of 1 lime
1 teaspoon chili powder
1/4– 1/2 teaspoon cayenne pepper
pinch of cumin
ground black pepper, to taste
1/2 sea salt + more to taste

Instructions:
Preheat oven to 400°F.

Toss sweet potato chunks with 1/2 Tablespoon of olive oil, season to taste with salt and pepper, and arrange evenly on a baking sheet. Bake in the preheated oven until the sweet potatoes are tender, about 25-30 minutes. Allow sweet potato chunks to cool.

Meanwhile, cook the quinoa according to package instructions. Allow quinoa to cool.

In a large mixing bowl combine quinoa, roasted sweet potatoes, bell pepper, black beans, shallot, cilantro and avocado. Add 1/4 cup olive oil, lime juice, chili powder, cayenne, cumin, black pepper and sea salt. Gently toss the salad to combine. Taste and adjust the seasoning, if necessary. Serve salad right away or chill in the fridge a few hours before serving. 

Add a sprinkle of queso fresco or feta cheese when serving, if desired.

Creamed Corn

Creamed Corn
Ingredients:
2 Packs 20 oz. Frozen Corn
8 oz. Whipping Cream
8 oz. Whole Milk
1 teaspoon Salt
1/4 teaspoon MSG or Accent
4 Tablespoons Sugar
Pinch White Pepper or Cayenne
2 Tablespoons  Melted butter
2 Tablespoons Flour

Directions:
Add all ingredients except butter and flour and bring to a boil; simmer 5 minutes.  Blend butter with flout in separate bowl then add to corn mixture.  Put in baking dish and sprinkle with fresh Parmesan cheese.  Bake under broiler until golden brown.  Serve immediately.

Mexican Chicken Rice Bowls

Mexican Chicken Rice Bowls
Enjoy this PROTEIN filled dish tonight for an easy and HEALTHY dinner! Mexican chicken rice bowls will be a new family favorite – YUM!
Ingredients:
2-1/2 lbs chicken breasts, cut into 2-inch long strips
4 cloves garlic, minced
1 large organic sweet bell pepper, chopped
3 tablespoons extra virgin olive oil
1/4 cup lime juice, divided
1 can or 28 oounces of cooked black beans, rinsed and drained
1/2 cup sweet organic corn
1/2 cup fresh organic tomatoes, diced
1 small red onion, diced
1/4 cup fresh cilantro, minced
3 cups cooked brown rice
Salt and pepper to taste
avocado for topping, optional
Greek yogurt for topping, optional

Directions:

1. In a large skillet over medium-high heat, saute chicken, garlic, and pepper in oil until chicken is cooked and peppers are tender. Remove from heat and stir in 2 tablespoons lime juice and salt and pepper to taste. Set aside.
2. In a large bowl, combine, beans, corn, tomatoes, onion, cilantro, and remaining lime juice. Season with salt and pepper to taste.
3. In serving bowls, layer chicken mixture, bean mixture, and cooked rice. Top rice bowls with yogurt and avocado if desired.
4. Enjoy!

Five Bean Salad

5 Bean Salad
Serves 6-8
Ingredients
1 (8.75 oz.) can corn
1 (15 oz.) can kidney beans
1 (15 oz.) can garbanzo beans
1 (15 oz.) can pinto beans
1 (15 oz.) can cannellini beans
1 (15 oz.) can black eyed peas
3/4 cup extra-virgin olive oil
1/2 cup red onion, finely chopped
1/2 cup champagne vinegar
1/3 cup sugar
1 teaspoon kosher salt
3/4 teaspoon freshly ground pepper
1/4 cup fresh cilantro, chopped
2 teaspoons oregano leaves, optional
Directions
Rinse and drain each can of beans and corn.

Toss the beans, corn and diced onion together with the olive oil in a large bowl.

Add salt and pepper, and mix well.

In a separate bowl, dissolve the sugar in the vinegar. Mix with the beans.

Toss well with cilantro and oregano, and serve at room temperature for maximum enjoyment.

Corn Pudding

Ingredients:
1 box Jiffy cornbread or muffin mix
1/2 cup butter, melted
1 can whole kernel corn
1 can cream-style corn
1 cup sour cream
2 eggs

Directions:
Preheat oven to 375 degrees.  Grease a 9 X 13 casserole dish.

Pour butter and corn into prepared dish.  Blend in sour cream.   In separate bowl, beat eggs and stir into casserole with muffin mix.  Bake 35 to 40 minutes or until center is firm.

Corn Pudding

Corn Pudding

Ingredients:
3 tablespoons butter, plus more for dish
2 cups corn (from about 3 ears)
1/3 cup sugar
1 teaspoon salt
2 large eggs beaten
2 cups whole milk
1/2 teaspoon freshly grated nutmeg

Directions:
Heat oven to 350 degrees and butter a 1 1/2-quart baking dish. Cut the corn from the cob into a mixing bowl by slicing from the top of the ear downward. Don’t go too close to the cob; cut only half the kernel, then scrape off the rest with the back of the knife.

Stir sugar and salt into corn. Mix beaten eggs and milk together, then stir into corn mixture. Add melted butter and mix thoroughly.

Spoon mixture into prepared dish and sprinkle with nutmeg. Place the dish in a larger baking dish or roasting pan. Transfer to oven and carefully pour hot water into the larger dish until it comes about halfway up the sides of the smaller baking dish.


Bake for 40 to 50 minutes, or until a knife inserted into the center of the pudding comes out clean. The pudding will be set but still jiggle.

Corn and Red Pepper Relish



Corn And Red Pepper Relish
Serves 8
Ingredients:

1 pound fresh corn kernels (4-5 cobs)
2 red bell peppers, seeds removed and finely chopped
1 large white onion, finely chopped
1 red chili, seeds removed and minced
1 small green onion, finely chopped
1 1/2 cups cider vinegar
1/2 cup sugar
2-3 teaspoons salt, or to taste
2 teaspoons yellow mustard seeds
2 teaspoons ground turmeric
mason jars, canning jars

Directions:
Combine all ingredients in a large pot or Dutch oven over medium-low heat and cook for 10 minutes, stirring occasionally, or until sugar has dissolved.

Raise heat and bring mixture to a boil, then reduce heat to low and let simmer for 40-45 minutes, or until relish has reduced and thickened.


Remove from heat and transfer relish into clean mason jars.

Store in refrigerator, but let stand at room temperature for 20-30 minutes before serving.

Slow Cooker Creamed Corn


Slow Cooker Creamed Corn
(makes 6 servings)
Ingredients
1/2 large onion, finely chopped
3 15oz cans whole kernel corn, drained
1 cup milk
1 tablespoon sugar
1/4 teaspoon pepper
1/4 teaspoon salt
1/8 teaspoon nutmeg
8oz cream cheese, cubed
1/2 cup unsalted butter, cut into thin slices


Directions
In a large saucepan, melt 1 tablespoon butter on medium heat. Add the chopped onions and cook 2-3 minutes until translucent. Transfer the onion to the slow cooker.


Place the corn in the slow cooker over the onion. Stir in the milk, sugar, nutmeg, salt and pepper until well combined. Without stirring, top with butter and cream cheese. Cover and cook on high heat for 2-3 hours.


Uncover and stir until the butter and cream cheese are well combined. Cover and cook on high for an additional 15 minutes. Serve hot.

Corn and Crab Soup


CORN AND CRAB SOUP
This soup is quick to prepare and the corn's fresh flavor is deliciously highlighted by the ginger, mint and lime. Crab makes a great addition but diced shrimp or even lobster would also work.
Ingredients:
3 to 4 cobs of corn, shucked
2 tablespoons vegetable oil
2 green onions, finely chopped
1 tablespoon finely chopped fresh ginger
1 teaspoon sugar
3 cups chicken stock
2 tablespoons soy sauce
7 oz. crab meat, drained
1 tablespoon freshly squeezed lime juice
1/3 cup packed fresh mint leaves, shredded

Directions:
Using a knife, remove the corn kernels from the cobs, placing them in a bowl. You should have about 3 cups. The the back of a knife, press down on the cob extracting any milky juice. Add it to the kernels: set aside.

Heat the oil in a saucepan; add the corn, green onions, ginger and sugar. Cook for 2 minutes to 3 minutes, then add the stock and soy sauce and bring to a boil. Skim then reduce the heat and simmer until the corn is tender, about 4 minutes.

Stir in the crab, lime juice and mint. Check the seasoning and serve. Serves 2 or 4

Grilled Pork Tenderloin With Bourbon Brown Sugar BBQ Glaze On Corn Maque Choux


GRILLED PORK TENDERLOIN WITH 
BOURBON BROWN SUGAR BBQ GLAZE 
ON CORN MAQUE CHOUX
This is another recipe from Phillis Carey my favorite instructor at Great News Cooking School.  Phillis offers great recipes that sound so gourmet but actually are created with simple ingredients and sometime combinations one wouldn't expect.  They always finish with great taste.

Ingredients:
Pork:
3 T. unsalted butter
1 cup diced onion
3/4 cup ketchup
1/2 cup fresh orange juice 

1/2 cup apple cider vinegar 
1/2 cup bourbon
1/3 cup brown sugar
1/4 cup molasses
2 T. Worcestershire sauce
Salt and pepper to taste
2 pork tenderloins (about 3 lbs.)
Serves 4 to 5.

1 T. grapeseed or vegetable oil

Corn:
4 slices thick bacon, diced
3/4 cup diced red bell pepper
1/2 cup diced onion
1/4 cup dry sherry
4 cups fresh corn kernels
1 cup heavy whipping cream
1 tsp. Tabasco
Salt and pepper to taste
1/2 cup thinly sliced green onions

Directions:
1. For Glaze, melt butter in a medium saucepan over medium heat. Add onion and cook until soft, 4 to 5 minutes. Stir in ketchup, orange juice, vinegar, bourbon, brown sugar, molasses, Worcestershire sauce and salt and pepper to taste. Bring to a boil; reduce heat and simmer 10 minutes. Cool slightly and then puree until smooth. Remove half the sauce to serve with the pork.

2. Preheat grill. Trim pork tenderloins of all fat and silverskin. Butterfly the tenderloins by slicing lengthwise down the center to within 1/2 inch of the bottom—do not cut all the way through. Season pork with salt and pepper and brush with oil. Set tenderloins on the grill, cut side down and cook, covered, for 7 minutes. Turn pork over and brush with some of the remaining sauce; continue cooking until internal temperature reaches 145 degrees. Brush pork with more sauce and turn over and brush with sauce again. Do this several times or until the pork is well glazed and the internal temperature reaches 150 degrees. Let pork rest on a carving board for 5 minutes or so before slicing on a diagonal into 1/2 inch thick slices.

3. Meanwhile, to make the Maque choux, cook the bacon in a large sauté pan over medium heat until crisp; pour off all but 1 T. drippings leaving the bacon in the pan. Add bell pepper, and onion and cook until soft, about 5 minutes. Add the sherry and cook, stirring to scrape up any bits from the bottom of the pan. Stir in the corn, cream, and Tabasco. Simmer until thickened, 3 to 4 minutes. Season to taste with salt and pepper and stir in the green onions.

4. To serve, spoon the corn onto serving plates and top with pork slices. Drizzle with some of the reserved sauce and serve, passing the remaining sauce.

Corn Casserole


Corn Casserole 
Ingredients:
1 can whole kernel corn, drained
1 can creamed corn
2 eggs beaten
1 stick butter, melted
4 heaping T. all purpose flour
2 T. sugar
1/4 C. diced green pepper (you can use red, I only had green)
1 C. whole milk
1/2 C. shredded cheddar cheese
1/4 tsp each salt and pepper 

Directions:
Combine all ingredients and pour into a greased casserole dish. Bake at 350 degrees for 1 hr. 20 min.

Corn and Chipolte Soup with Radish and Avacado Salsa


Corn and Chipotle Soup 
With Radish and Avocado Salsa
30 minutes or fewer

Canned chipotle chiles add heat and a wonderful smokiness to this sweet soup.

Ingredients:
2 Tbs. olive oil
1 medium onion, thinly sliced (1 ½ cups)
1 clove garlic, peeled and thinly sliced
¼ tsp. ground coriander
3 cups fresh corn kernels or 1 1-lb. pkg. frozen corn, thawed
2 cups low-sodium vegetable broth
2 chipotle chiles in adobo sauce, chopped
¾ cup almond milk
3 large radishes, diced (⅓ cup)
½ avocado, peeled and diced (½ cup)
2 tsp. lime juice
Fresh cilantro leaves, for garnish (optional)

Directions:
1. Heat oil in pot over medium heat. Add onion, and sauté 5 minutes. Stir in garlic and coriander, and cook 1 minute. Set aside ½ cup corn for garnish; add remaining corn, broth, and chiles to pot; bring to a simmer. Cover, and simmer 7 minutes. Stir in almond milk. Purée mixture with immersion blender, and season with salt, if desired.

2. Combine radishes and avocado in bowl. Stir in lime juice. Serve soup garnished with 2 Tbs. avocado mixture, a sprinkling of corn kernels, and cilantro (if using).  Serves 4
