Mini Pumpkin Whoopie Pies With Bourbon Maple Syrup Italian Meringue Buttercream

 Mini Pumpkin Whoopie Pies with Bourbon 
Maple Syrup Italian Meringue Buttercream

Ingredients:

Makes 30 small whoopie pies

Cookies:

1 stick unsoftened butter, room temperature
1/2 cup vegetable oil (I prefer sunflower)
2 cups dark brown sugar, packed
3 tablespoons bourbon barrel aged maple syrup
2 teaspoons vanilla extract
2 large eggs, room temperature
3 1/4 cup unbleached all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt
2 teaspoons cinnamon
1 teaspoon ginger
1/2 teaspoon nutmeg
1/2 teaspoon allspice
1/4 teaspoon cloves
1 15-oz can Libby’s Pure Pumpkin Purée


Directions:

Preheat the oven to 350F. Line five baking sheets with parchment paper. 


Sift together flour, baking powder, baking soda, salt, and spices. Set aside.


Beat together the butter, oil, brown sugar, and maple syrup on low-medium speed in a stand mixer using the paddle attachment, until fluffy. 


Beat in vanilla extract and eggs, one at a time on low speed.  Scrape the bottom and sides of bowl, then increase speed to low-medium and beat until well mixed andlighter in color. 


On low speed, beat in the pumpkin one spoonful at a time. Switch to a rubber spatula and fold in the flour mixture in three additions, mixing well after each addition. Scrape the sides and bottom of the bowl to make sure all of the flour is incorporated. Batter will be thick.


Use a medium (1.5 Tbs) cookie scoop to place evenly sized mounds of thick batter onto the prepared baking sheets, 12 per sheet. 


Bake until the cookies feel firm and set, lightly browned around the edges,about 13-14 minutes. (I bake three sheets at a time, rotating halfway through to ensure even baking)


Remove from the oven, cool on the baking sheets for a few minutes, then slide the cookies on the parchment paper to a rack to cool completely.


Bourbon Maple Syrup Italian Meringue Buttercream:

8 oz bourbon barrel aged maple syrup (alternatively, use 7 oz Grade A amber maple syrup and add 1 Tablespoon bourbon)

4 egg whites (about 4 oz), room temperature

1/4 tsp cream of tartar

1/8 tsp salt

1 tsp vanilla extract

1/2 tsp pumpkin pie spice

2 sticks unsalted butter, cut into tablespoon pieces and at room temperature (but still cool to touch)


Directions:

In a 2 qt stainless steel pot, bring maple syrup to a boil over med-high heat. Reduce heat to low-medium and continue cooking until syrup reaches 245F on a candy thermometer. Swirl the pan occasionally,

which will help knock down any foam that builds up. 


Meanwhile, place the egg whites and cream of tartar into a clean bowl of a stand mixer, and whip using the whisk attachment on med-high speed, until soft peaks form. 


Turn the mixer speed up to high when the syrup reaches 240F, to create stiff peaks.


When the syrup reaches 245F, turn the mixer to medium speed and slowly pour the hot syrup in a thin steam into the meringue, aiming the stream between the whisk and the side of the bowl. Once all of the syrup has been added (do not scrape in any caramelized bits from the pot), turn the mixer speed back to high and let whip until the meringue is stiff, glossy, and not warm to the touch anymore.


On medium speed, add the salt, vanilla extract, and pumpkin pie spice. Then, whisk in 1 tablespoon of butter at a time. Let each pat of butter almost fully incorporate before adding the next. The meringue will deflate and may look curdled, just keep whipping. After all of the butter is in, continue to whip until a smooth buttercream forms. Use immediately.



Assembly:

Using a piping bag, small cookie scoop, or a spoon, place a large dollop of the filling on the flat side of half of the cookies. Gently sandwich with the other halves to form whoopie pies. Enjoy.


Pies may be refrigerated for storage, but are best eaten at room temperature.

 Pumpkin Pecan Coffee Cake
Ingredients:
1/3 cup of butter, melted
1 (15) ounce can of pure pumpkin (not pumpkin mix)
2 eggs
1 (15.25) ounce butter yellow cake mix (I use Betty Crocker)
2 teaspoons of pumpkin pie spice
1 teaspoon of baking soda
1 teaspoon of vanilla
Topping Ingredients
2/3 cup of brown sugar
1/4th cup of white sugar
1 teaspoon of cinnamon
1/2 cup of butter, sliced in small pieces
1/2 cup flour
1 cup of pecans
Icing Topping (optional)
1 cup of powdered sugar
1/4th cup of milk or cream


Directions:

Preheat oven to 350 degrees. 

Mix melted butter, eggs, vanilla, pumpkin spice, pure pumpkin and combine with a mixer. Next add cake mix (just the dry mix) and baking soda and mix all together. Spray a 9X13 dish with cooking spray and pour mixture into pan.

Next combine all topping ingredients. It will be more like a crumble with the sliced butter. Spread over top of cake. Pat down a little so it will stick. Bake for 25-30 minutes. Mine was done right at 30 minutes, but oven vary so be sure and check it to see if it tests done. Remove from oven and let cool. If adding the icing topping, combine powdered sugar and milk and drizzle over cake.

Black Bean Pumpkin Soup

Black Bean Pumpkin Soup
If you make only one recipe from the blog, it should be this soup.  It will become your favorite also. 
Ingredients:
3 15oz. cans black beans
1 cup diced tomatoes, drained
1 1/4 cup diced onions
1/2 cup minced shallot
4 garlic cloves
1 tablespoon + 1 teaspoon ground cumin
1 teaspoon salt
1/2 teaspoon fresh ground black pepper
1/4 cup butter
1 16 oz. can pumpkin puree
3 to 4 tablespoon sherry vinegar
1/2 cup dry sherry optional*

Directions:
Drain and rinse the black beans.  In a 6 qt stock pot sauce onion and shallot, when transparent add crushed garlic and stir for one minute.  Stir in beans, pumpkin puree, and sherry, until combined.  Add enough chicken stock to correct the consistency and simmer uncovered, stirring occasionally for 25 minutes.  Season to taste.

Hazelnut Date Pumpkin Bread

Ingredients:
5 cups flour
2 1/2 cups sugar
4 teaspoons baking soda
1-3/4 teaspoons ground cinnamon
1-1/2 teaspoons salt
3/4 teaspoon ground ginger
3/4 teaspoon ground cardamom
2 large eggs, room temperature
1 can (29 ounces) solid-pack pumpkin
1 cup 2% milk
1 cup canola oil
1 teaspoon vanilla extract
2 cups chopped hazelnuts
2 cups chopped dates

Directions:
Preheat oven to 350°. In a large bowl, whisk the first 7 ingredients. In a stand mixer, beat eggs, pumpkin, milk, oil, and vanilla until blended. Beat in flour mixture just until moistened. Fold in hazelnuts and dates.

Transfer to 3 greased 8x4-in. loaf pans. Bake until a toothpick inserted in center comes out clean, 50-55 minutes. Cool in pans 10 minutes before removing to wire racks to cool. Freeze option: Securely wrap cooled loaves in foil, then freeze. To use, thaw at room temperature.

Pumpkin Bacon Dog Biscuits

Ingredients
2/3 cup canned pumpkin
2 eggs
1/4 cup creamy peanut butter
1/2 cup packaged crumbled cooked bacon pieces
2 1/3-2 1/2 cups whole wheat flour

Directions
In a large bowl, beat the pumpkin, eggs and peanut butter with an electric mixer on medium speed until smooth. Beat in bacon. Beat in as much of the flour as you can with the mixer. Stir in enough remaining flour until dough is no longer sticky. 

On a lightly floured surface, roll dough to 1/4-inch thickness. Cut into shapes using a 1 1/2- to 2-inch cookie cutter. Place 1 inch apart on ungreased cookie sheets. Bake in a 350 degrees oven for 30 to 35 minutes or until crisp and lightly golden. Transfer to wire racks and let cool. Store in an airtight container for up to 1 month.

Pumpkin Coffee Cake With Streusel

PUMPKIN COFFEE CAKE WITH STREUSEL

INGREDIENTS:

For the streusel: 
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 1/2 tablespoons cinnamon
  • 1 cup butter, melted
  • 2 1/2 cups flour
For the cake:
  • 3 cups all purpose flour
  • 1 1/2 teaspoons baking soda
  • 1 1/2 teaspoons baking powder
  • 1 tablespoon cinnamon
  • 1/2 teaspoon salt
  • 1 cup brown cup sugar
  • 1/2 cup granulated sugar
  • 1 cup (2 sticks) butter, room temperature
  • 2 eggs
  • 2 (15 ounce) cans pumpkin puree
For the glaze: 
  • 1/2 cup powdered sugar
  • 1 tablespoon milk

DIRECTIONS:

Streusel Topping;
    Blend the sugars,  cinnamon and salt until well combined.  Stir in the melted butter.Stir in the flour. Set aside while you prepare the cake batter. 

    Cake Batter;
    Add the flour, baking soda, baking powder, cinnamon, and salt to a large mixing bowl and whisk to combine.

    Add the sugars and butter to a medium mixing bowl and beat with a mixer until light and fluffy.
    Beat in the eggs and pumpkin until just combined.
    Add the pumpkin mixture to the flour mixture and stir until just combined.
    Spread cake batter into prepared pan.
    Take the streusel topping in your hands and press together to form large crumbs. Top the cake with the streusel. It will seem like too much, but use it all for the best streusel experience.
    Bake for 50 minutes or until a tester inserted in the middle comes out mostly clean.
    Cool completely.
    Whisk together the powdered sugar and milk to make the glaze. Drizzle over the top before serving.
