Grain Salad With Blueberries
Ingredients:
Quinoa or farro
Fresh Blueberries
Diced cucumbers
Fresh mint
Minced red onion
Lemon vinaigrette
Slivered almonds

* Note Always rinse quinoa first before cooking with cold water. It has a coating which should be removed before cooking which also affects the flavor. I also found a perfectly cooked quinoa can be made in the microwave. 1 cup of water to 3/4 cup quinoa in a covered container for 9 minutes. Perfctly cooked!

Directions:
Cook quinoa or farro according to directions and cool. Dice cucumber, chop fresh mint, and mince red onion. Toss to mix well. Add fresh blueberries and toss. Drizzle with a lemon vinaigrette and top with slivered almonds.
