Cream of Mushroom Chicken
Ingredients:
1 tablespoon olive oil
2 medium chicken breasts, cut into 1" cubes
16 oz. mushrooms, sliced
4 garlic cloves
1 cup shallots, chopped
1/2 teaspoon salt and pepper
2 cups chicken broth
1 1/2 cup white rice
1 cup sour cream
1/2 cup chopped parsley
Red chili flakes for topping
Directions:
Add to Instant Pot in this order, olive oil, chicken breasts, mushrooms, 4 garlic cloves, chopped shallots, salt, and pepper. Cook High pressure for three minutes. Allow natural pressure release for 15 to 20 minutes. Release any remaining pressure. Open lid and add sour cream and parsley. Serve with red pepper flakes for topping. Serves 4
