Sauerkraut and Corned Beef Soup
1/2 cup diced onion
3 tablespoons butter
1/4 cup flour
3 cups boiling water
4 cubes beef bouillon
8 ounces Corned Beef, shredded
1 14oz can Bavarian sauerkraut, drained
3/4 teaspoon caraway seed
3 cups half & half
2 cups shredded Swiss Cheese
Directions:
In a large pot melt butter and saute chopped onion until tender.

Add a little water: stir and add flour to make a roux.
Add remaining water and bullion. Bring to a boil, reduce heat to low simmer for five minutes, stir in shredded corned beef, drained, sauerkraut, cream and cheese.
Cook and stir until slightly thickened. Yield: 8 cups soup
Keep stirring, and pour into crockpot to keep warm. Serve with crackers or Rye bread.
