Blue Cheese Tarts

Blue Cheese Tartlets
Ingredients:
8 oz. tart pastry dough or commercial puff pastry
3 oz. spinach or Swiss chard, trimmed
1 egg
2/3 cup heavy cream
3/4 cup Emmenthaler cheese, freshly grated
1/4 teaspoon freshly grated nutmeg
salt and freshly ground pepper
3 oz. Roquefort Cheese, crumbled
2 tablespoons pine nuts

Directions:
If using tart pastry, prepare the dough and refrigerate for at least 3 hours.  Remove from the refrigerator 30 minutes before you are ready to roll out.  If using commercial puff pastry, defrost it in the refrigerator or at room temperature.

Preheat an oven at 425F*.  Bring a large saucepan filled with water to a boil.  Plunge the spinach or S Swiss chard into the boiling water and cook for 30 seconds.  Immediately drain in a colander and rinse with cold water to halt the cooking.  Drain again, pressing against the greens to force as much water  as possible; set aside.

Break the egg into a bowl.  Add the cream Emmenthaler cheese, nutmeg, and salt and pepper to taste and beat with a fork until completely blended.  Coarsely chop the spinach or chard and add it to the bowl; stir well.

On a lightly floured board, roll the dough as thinly as possible.  Sprinkle the Roquefort evenly over the dough.  With a fluted pastry cutter about 1 1/4" in diameter, cut out 18 dough rounds.  Use the rounds to line individual tartlet pans or the wells in tartlet trays or miniature muffin pans.  Arrange the the lined pans on a large baking sheet.  Fill each lined pan with some of the egg mixture and scatter a few pine nuts on top.  Place the tartlets in the oven and bake until the filling is set and crusts are golden, about 15 minutes.  Serve warm.  Makes 18 tartlets, serves 6.

Warned Camembert With Warm Mushroom Fricassee Post 1400

Warm Camembert with
Warm Mushroom Fricassee
Ingredients
1/2 cup English walnuts
1 8oz. wheel of Camembert
1 tablespoon walnut oil
3/4 pound fresh wild mushrooms
salt and pepper
1 shallot, minced
2 tablespoons parsley, minced
2 large sage leaves, minced
Sour dough toasts Warmed platter
***
Directions:
Preheat oven to 350 degrees. Toast walnuts on a baking sheet 7 minutes or until lightly browned.
*
Reduce oven temp to 300 degrees. Remove Camembert from the box and remove the wrapper. Put the cheese back in the bottom half of the box and set on a baking sheet or cake pan to warm. Bake about 10 minutes or until soft.
*
Meanwhile in a large skillet heat the walnut oil. Add the mushrooms and season with salt and pepper. Cover and cook over moderate heat, stirring occasionally until softened, about 5 minutes. Uncover and cook until lightly browned, 3 minutes or longer. Add the shallots and cook about 2 minutes, until softened. Stir in the parsley and sage, season with salt and pepper.
*
Invert the warmed Camembert onto a platter. Stir the walnuts into the mushrooms and spoon mixture over cheese.
 *
Serve with Sourdough toasts.
***
My Recommendations: Since this recipe goes together very quickly with minimal effort, I would suggest mincing the parsley, sage, and shallot prior to beginning to prepare the recipe. Serve on a warmed platter (not hot). The walnut oil really enhances the flavors and I would highly recommend not substituting it with vegetable oil. Do not use dried mushrooms reconstituted as they always remain "tough". We also did not toast our baguette and found the thin slices of bread to be acceptable. This recipe was found in a Wine & Food magazine. Living near daughter Anne who planned a Saturday evening dinner while our youngest daughter Barbara was visiting for Mothers Day, I offered to bring this appetizer. We opened a chilled bottle of Chardonnay and all agreed this appetizer was over the top. (And the meal!)

Mushroom and Kalamata Olive Tapenade On Parmesan Toasts

Mushroom And Kalamata Olive
Tapenade On Parmesan Toasts
These toasts would preform alone as an appetizer as well as an accompaniment to this great salad. Phyllis Carey provided this recipe in her California Wine Country Cooking Class. Her tips: to quickly infuse olive oil use a mini-food processor. To make toasts ahead, freeze and rewarm. Also toast the sliced bread lightly golden not toast brick hard (8 minutes)!
*
Toasts:
1/3 cup olive oil
2 cloves garlic, minced
12 thin diagonally cut baguette slices
1/4 cup freshly grated Parmesan cheese
*
Preheat oven to 375 degrees. Combine olive oil and garlic and let stand for 1 hour to blend flavors. Brush on baguette slices and arrange on parchment-lined baking sheets. Sprinkle with Parmesan cheese and bake 8 minutes or until crispy and cheese has melted.
***
Tapenade:
2 tablespoons olive oil
1/2 cup chopped red onion
1 teaspoon minced garlic
2 cups thinly sliced white mushrooms
2 teaspoons aged balsamic vinegar
3 tablespoons chopped chives
1/2 cup chopped Kalmata olives
Salt and pepper to taste
*
Heat olive oil in a medium non-stick skillet over medium heat: add onions and garlic and cook 1 minute. Add the mushrooms and sprinkle lightly with salt. Cook 5 to 6 minutes or until mushrooms are very tender and most of the liquid has cooked away. Stir balsamic vinegar, chives and olives and season to taste with salt and pepper. Spoon on toasts just prior to serving.

Swedish Meatballs with Mashed Potatoes

<span class=
SERVES 6

INGREDIENTS

4 lb. (about 5 large) russet potatoes, peeled and cut into 1″ chunks

2 ¼ cups heavy cream
14 tbsp. unsalted butter, cubed
Kosher salt and freshly ground black or white pepper, to taste
2 slices (about 3 oz.) crustless white bread, torn into small pieces
12 oz. ground pork
12 oz. ground beef
¼ tsp. ground allspice
1 egg, lightly beaten
½ small yellow onion, minced
3 tbsp. flour
3 cups beef stock
Lingonberry preserves, for serving
*

Directions:

1. Make the mashed potatoes: Place potatoes in a 4-qt. saucepan and cover with water by 1″; bring to a boil over high heat, and cook until potatoes are tender, about 15 minutes. Drain potatoes and pass through a ricer or food mill set over a bowl; set aside. Meanwhile bring 1 ½ cups cream and 12 tbsp. butter to a boil in a 1-qt. saucepan; pour over potatoes and whisk until smooth. Season with salt and pepper, and keep warm until ready to serve.
*
2. Make the meatballs: Place ½ cup cream and bread in a small bowl; let sit until soft, about 5 minutes. Transfer to a large bowl along with pork, beef, allspice, egg, and onion, season with salt and pepper, and mix until evenly combined. Shape mixture into about thirty 1-oz. balls, about 1″ in diameter. Heat remaining butter in a 12″ skillet over medium heat; working in batches, add meatballs and cook, turning as needed, until browned all over and cooked through, about 12 minutes. Using a slotted spoon, transfer meatballs to a plate and set aside.
*
3. Return skillet to medium-high heat. Add flour, and cook, stirring, until smooth and light brown, about 4 minutes. Whisk in beef stock until smooth, and then bring to a boil; stir in remaining cream and return meatballs to gravy. Reduce heat to medium, and cook, stirring gently, until meatballs are warmed through, about 3 minutes; season with salt and pepper. Serve meatballs and gravy over mashed potatoes with a generous dollop of Lingonberry preserves.
