Apricot And Mulberry Jam Thumbprint Cookies


Apricot and Mulberry Jam Thumbprint Cookies
Serves: About 4 dozen cookies
INGREDIENTS
½ cup jam (apricot, mulberry, or your favorite)
2 ¼ cups unbleached all-purpose flour
½ teaspoon kosher salt
½ teaspoon baking soda
¼ teaspoon baking powder
12 tablespoons (1 ½ sticks) unsalted butter, softened
⅔ cup sugar
3 ounces cream cheese, softened
1 large egg
1 teaspoon orange blossom water
½ teaspoon vanilla extract

INSTRUCTIONS
Preheat oven to 350 degrees. 


Line 2 large baking sheets with parchment paper. In a medium bowl, whisk the flour, salt, baking soda, and baking powder.

Beat the butter and sugar on medium speed until the mixture is light and fluffy, 3 to 6 minutes. 

Beat in the cream cheese, egg, flower water, and vanilla until combined, about 30 seconds, scraping down the sides of the bowl as needed.

Reduce mixer to low and slowly add the flour mixture just until combined.

Roll the dough into balls between the palms of your hands, about 1 ½ teaspoons of dough per ball. Place them on the prepared baking sheets about 1 ½ inches apart. Use your thumb, moisted in water to prevent sticking, to indent the center of each cookie.

Bake until the cookies are just beginning to set, about 10 minutes. Remove the pan from the oven and, working quickly, reshape the indentation using the rounded bottom of a teaspoon. Use a small spoon to carefully fill the indentations with jam.

Return the cookies to the oven and bake until light golden, 12 to 14 minutes.

Cool the cookies for 10 minutes on the sheets, then transfer to a wire rack to cool completely before serving.

White Chocolate Cranberry Cookie


White Chocolate Cranberry Cookies
Ingredients:
1/2 cup butter, softened
1/2 cup packed brown sugar
1/2 cup white sugar
1 egg
1 tablespoon brandy
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda 
3/4 cup white chocolate chips
1 cup dried cranberries

Directions:

Preheat oven to 375 degrees.  Grease cookie sheets.


In a large bowl, cream together the butter, brown sugar, and white sugar until smooth.  Beat in the egg and brandy.  Combine the flour, and baking soda; stir into sugar mixture.  Mix in the white chocolate chips and cranberries.  Drop by heaping spoonful onto prepared cookie sheets.

Bake for 8 to 10 minutes in the preheated oven. For best results, take them out while they are still doughy. 

Allow cookies to cool for 1 minute on the cookie sheets before transferring to wire racks to cool completely.

Yield 2 dozen.

Milk Chocolate-Dipped Hazelnut Sandies

Milk Chocolate-Dipped Hazelnut Sandies
These crisp, buttery cookies are a riff on classic hazelnut sandies; the cookies are doctored with crunchy cocoa nibs and then dipped in luscious milk chocolate.

Ingredients:
1 ½ cup hazelnuts
¾ cup cocoa nibs (2 1/2 ounces)
2 ¾ cup all-purpose flour

1 tsp unsweetened Dutch-process cocoa powder 
1 tsp kosher salt
½ tsp ground cinnamon
3 sticks unsalted butter, at room temperature 
½ cup confectioners’ sugar 
1 tsp vanilla bean paste or pure vanilla extract 
12 oz high-quality milk chocolate, finely chopped

Directions:
In a food processor, pulse the hazelnuts and cocoa nibs until coarsely ground. Scrape into a medium bowl and whisk in the flour, cocoa powder, salt and cinnamon.

In the bowl of a stand mixer fitted with the paddle, beat the butter with the confectioners’ sugar and vanilla bean paste at medium speed until light and fluffy, about 3 minutes. Add the dry ingredients and beat at low speed just until incorporated. Scrape the dough onto a work surface and form into a ball. 

Halve the dough, then shape each half into a 1 1/2 -inch square log and wrap in parchment paper. Freeze until firm, at least 2 hours or overnight.

Preheat the oven to 350°. Line 2 large rimmed baking sheets with parchment paper. Working in 2 batches, cut the cookie-dough logs into 1/4-inch-thick slices and arrange on the prepared sheets at least 1 inch apart. 

Bake the cookies for about 15 minutes, until lightly browned on the bottom; rotate the baking sheets from top to bottom and front to back halfway through baking. 

Let the cookies cool on the baking sheets for 5 minutes, then transfer to a rack to cool completely.
In a medium saucepan, bring 1 inch of water to a simmer. Place the milk chocolate in a heatproof small bowl and set it over the saucepan. Stir the chocolate until melted and smooth. Remove the saucepan from the heat; leave the bowl of chocolate on top. Dip 1 corner of each cookie in the chocolate to coat halfway, letting the excess chocolate drip back into the bowl. Transfer the cookies to parchment paper-lined baking sheets and refrigerate until the chocolate is set, about 20 minutes.

MAKE AHEAD: The chocolate-dipped cookies can be stored in an airtight container for up to 5 days.

Yield 6 1/2 dozen cookies.

Chocolate Dipped Macaroons

Ingredients:
14 ounces, (weight) sweetened coconut
14 ounces, fluid sweetened, Condensed Milk
2 large egg whites
½ teaspoons vanilla
¼ teaspoons salt
½ cup melted semi-sweet chocolate chips for dipping
   

Directions:
Preheat the oven to 325 degrees. Line a baking sheet with parchment paper. 
 
In a large bowl, mix the coconut, condensed milk, salt and vanilla. In another bowl whip the egg whites.

Russian Tea Balls ..... Day Eleven of "Twelve Days of Christmas Cookies".


Russian Tea Balls
This recipe has many different names. Whatever the name this buttery cookie is a crowd pleaser. This cookie is a favorite of my husband. When I do my holiday baking I am sure to include these Russian Tea Balls.

Ingredients:
1/2 pound butter
6 Tablespoons sugar
1 teaspoon vanilla
2 cups flour
2 cups pecans, ground fine

Directions:
Cream butter and sugar; add vanilla, nuts and flour. Mix well. Form dough into walnut sized balls. Place on ungreased baking sheets. Bake at 275 for 50 to 60 minutes.

Flash Back Friday .. Hedge Hogs ... Day Eight of Twelve Days of Cookies


Hedge Hogs
This recipe exposes my German roots. A hedge hog is a small animal that is a cross between porcupine and a ground hog but much smaller and is found in Germany. My Aunt Florence shared this recipe. I do like dates and this is a favorite of mine. Gooey, chewy, sweet dates!
Ingredients:
2 cups chopped walnuts
1 cup pitted dates, grind coarse
1 1/2 cups flaked coconut
1 cup packed brown sugar
2 eggs slightly beaten
Additional coconut for coating

Directions:
Add ingredients and mix well. Form into one inch round balls (about one Tablespoon dough) and roll in additional coconut to coat. Bake at 350 for 10 to 12 minutes on a prepared baking sheet.
Note: One batch is never enough and I always double this recipe.
