Rosemary Butter Cookies

Rosemary Butter Cookies 
These cookies are buttery rich 
with a hint of rosemary flavoring. 

Ingredients:
1 cup unsalted butter, softened
3/4 cup sugar
1 large egg
1 tsp. vanilla extract
2 1/2 cups all-purpose flour
1 tablespoon finely chopped fresh rosemary
3/4 teaspoon coarse salt
1/2 sup fine sanding sugar

Directions:
Mix together butter and sugar on medium until pale and fluffy.  Mix in egg and vanilla.  Reduce speed to low and mix in flour, rosemary and salt. 

Roll dough into two 6-inch logs and freeze until firm enough to slice.  Unwrap the logs and roll in the sanding sugar to coat the log.  Slice into 1/4" slices.

Baking the cookies:  Preheat the oven to 375*F.    Bake for 15 to 18 minutes, until the edges are golden.  Yields: about 3 1/2 dozen cookies.
